PICKING THE RIGHT ACID

Acids are naturally present in fruits and are responsible for their sour taste. They are also essential for enhancing flavors. The most common fixed acids include citric, malic, tartaric, and
other organic acids found in smaller quantities. While fruits often contain a mixture of acids, citric acid is the most widely used in the food industry and is popular for making fruit gummies. However, to more accurately replicate the flavor of a specific fruit in your gummies, it’s best to
use the primary acid found in that fruit. Although acids aren’t necessary to create gummies, they can greatly enhance the flavor experience.
The three main acids we recommend in our Gellies gummy applications:

Citric Acid
Citric acid is the main component in citrus fruits such
as lemons, limes, oranges, andpineapples. It is also the primary acid in strawberries, raspberries, and other berries. In our experiments, we found that citric acid works well for
watermelon-flavored gummies as well.

Malic Acid
Malic acid is a naturally occurring organic compound that is most famously found in apples, contributing to their characteristic tartness. Known for its smooth and slightly sour taste, this acid is the primary acid in fruits like apples and stone fruits such as cherries,
apricots, peaches, and nectarines.

Tartaric Acid
Tartaric acid is the primary acid found in grapes and tamarind, contributing to their distinct tartness. Known for its
sharp and tangy taste, tartaric acid is often used in winemaking to stabilize wine and enhance its flavor profile. It can also be used in candy
flavors, such as blue raspberry, to add a vibrant
sour note.

ACID DOSING
Recommendation
Based on our gummy experiments, the recommended acid dosing rate is 1.3% of the total mass, equating to approximately 3.5 grams when making 100 gummies. This produces an average level of sourness, but you can easily adjust the flavor by increasing or decreasing the acid amount. To fine-tune the acidity to your liking, make incremental adjustments of 0.15 grams at a time.
GELLIES DOSING
Recommendation
The recommended Gellies flavor dosing should range from 0.5% to 2.5% of the total formula. For a batch of 100 gummies, this means adding between 1.35 grams and 14 grams of Gellies. In the sample recipe provided, we use our preferred amount of 2% (9 grams). Your recipe may vary depending on personal preferences for flavor intensity, sugar content, and other factors. When starting out with Gellies, we recommend beginning with a dosing rate of 0.5%. Starting small allows you to evaluate the flavor profile and how its intensity changes with higher concentrations. Our maximum dosing recommendation is 2.5%. Adding too much flavor can result in an unpleasant taste, and consumers may experience flavor burn or chemical off-notes. Adjust the flavor by increasing or decreasing it in 0.15-gram increments for each trial until the desired flavor intensity is achieved.

Before getting started…
1. Have all materials clean and available before starting the flavoring process.
2. Use isopropyl alcohol or ethanol to clean beakers and tools. Wipe them clean with a lint-free towel and then use a heat gun to dry them thoroughly.
3. After cleaning, rinse all beakers and tools with Reverse Osmosis (RO) or Deionized (DI) Water. Do not use tap water. Dry the water by wiping with a lint-free towel followed by the heat gun.
Warning: Do not use heat gun on any flammable solvents.

Straight Gellies Gummies

In a mixing bowl, combine 93 grams of deionized (DI) water and 35 grams of gelatin. Mix

quickly until all the gelatin is thoroughly soaked with water. Set the mixture aside to allow the gelatin to “bloom” for 5-10 minutes before heating. Blooming allows the gelatin to fully

absorb the water, ensuring a smooth texture in the final application.

2 In a saucepan, measure out 147 grams of corn syrup, 147 grams of sugar, and 24 grams of deionized (DI) water.

3 Attach a candy thermometer to the saucepan, ensuring the metal probe is not touching the bottom of the saucepan.

Heat the corn syrup, sugar, and water mixture on the stove to 250°F (roughly medium-high),
4 stirring occasionally with a spatula to ensure everything is thoroughly mixed. Be careful not to prolong this step, as the sugar syrup can overcook and start to caramelize, altering the color, taste, and texture. The syrup should be clear to light yellow.

5 Reduce the heat to the lowest setting, allowing the temperature to drop to approximately 220°F before proceeding to the next step.

6 While the temperature is dropping, cut or tear the bloomed gelatin into four equal parts.

Once the saucepan has reached 220°F, add the gelatin pieces one at a time while mixing
7 thoroughly using the spatula. You may want to briefly remove the saucepan from the heat to prevent overheating. Overheating the gelatin can disrupt its structure, potentially altering the texture and color of the final product.

8 enable the “scum” to rise to the surface. In gummy manufacturing, “scum” refers to decomposed proteins that can affect the clarity of the gummies. This process typically takes about 15-20 minutes.
Use a spatula to gently scrape off the “scum” from the surface of the mixture and dispose of
9 it. Ensure the temperature remains low enough to keep the mixture melted. If the mixture is simmering, the temperature is too high and needs to be reduced.
After removing the “scum,” add 9 grams of Abstrax Gellies flavor and 6 grams of citric acid to
10 the saucepan. Mix slowly and thoroughly until the citric acid is fully dissolved and the flavor is evenly dispersed throughout the mixture.
11 The solution is now ready to be deposited into the gummy molds. Here are several methods you can use: Pour and Scrape Method: Pour the mixture into the molds, then use a spatula or bench scraper to ensure each mold is completely filled with the gummy mixture.
Plastic Pipette Method: Use a pipette to fill each mold individually with the gummy mixture until it reaches the top. MAKING CANNABIS-INFUSED
Gummies with Gellies
Creating cannabis-infused gummies can be tricky. Gelatin is water-soluble, while cannabis compounds are oil-based, which can lead to uneven distribution of THC throughout the batch. This can result in some gummies being more potent than others, which is far from ideal.
To overcome this issue, we recommend using water-soluble cannabinoid emulsions. These emulsions ensure that THC blends and disperses evenly throughout the gummy mixture. If you’re in California, we can supply you with high-quality water-soluble cannabis emulsions to enhance your gummy formulations.
Water-soluble emulsions also improve bioavailability, allowing the body to absorb THC more efficiently and quickly. Traditional oil-based THC can take longer to digest, resulting in a delayed onset of effects. In contrast, water- soluble formulations enable THC to be absorbed rapidly into the bloodstream, providing a quicker and more predictable onset of effects. This results in a consistent and reliable consumer experience.
We recommend the following three sources of THC for creating cannabis-infused gummies:

Before we begin mixing, we need to calculate the amount of Water-Soluble THC required to
1 produce 100 gummies, each containing 5 mg of THC. In this example, our THC emulsion has a concentration of 2% THC.

Desired THC per Gummy: 5 mg

Calculate the Total THC Emulsion Needed: THC Concentration = 2%

Emulsion Needed 5 mg

Concentration 0.020

Convert the Formula to Grams:

250 mg / 1000 = 0.25 grams

Each gummy will contain 0.25 grams of 2% THC emulsion, resulting in a 5 mg THC potency.

To calculate the total amount of THC emulsion required for 100 gummies, multiply the amount per gummy by 100:
0.25 x 100 = 25 grams
This calculation does not account for any transfer loss. To account for transfer loss, consider a typical yield ratio. To be conservative, assume a loss rate of 25%.

To calculate the adjusted amount needed, add 25% extra by multiplying by 1.25: 25 grams x 1.25 = 31.25 grams
Therefore, the total amount of THC emulsion needed is 31.25 grams.

VERSION B:
Water-Soluble THC Powder + Gellies + Terpene Effects

1 Before we begin mixing, we need to calculate the amount of THC powder required to produce 100 gummies, each containing 5 mg of THC. In this example, our THC powder has a concentration of 20% THC.

Desired THC per Gummy: 5 mg

Calculate the Total Powder Needed Based on THC Load: THC Load = 20%

= 25 mg

Convert the Formula to Grams:

25 mg / 1000 = 0.025 grams

Each gummy will contain 0.025 grams of 20% THC powder, resulting in a 5 mg THC potency.

To calculate the total amount of THC powder required for 100 gummies, multiply the amount per gummy by 100:
0.025 x 100 = 2.5 grams
This calculation does not account for any transfer loss. To account for transfer loss, consider a typical yield ratio. To be conservative, assume a loss rate of 25%.

To calculate the adjusted amount needed, add 25% extra by multiplying by 1.25: 2.5 grams x 1.25 = 3.125 grams
Therefore, the total amount of THC powder needed is 3.125 grams.

In a mixing bowl, combine 93 grams of deionized (DI) water and 35 grams of gelatin. Mix
2 quickly until all the gelatin is thoroughly soaked with water. Set the mixture aside to allow the gelatin to “bloom” for 5-10 minutes before heating. Blooming allows the gelatin to fully absorb the water, ensuring a smooth texture in the final application.

Water-Soluble THC Powder + Gellies + Terpene Effects
In a saucepan, measure out 147 grams of corn syrup, 143.875 grams of sugar, and 19 grams of
3 deionized (DI) water. Please note that this recipe uses less water than Version A, which does not include terpenes. We also use less sugar to accommodate the addition of THC powder in step 9.
4 Attach a candy thermometer to the saucepan, ensuring the metal probe is not touching the bottom of the saucepan.
Heat the corn syrup, sugar, and water mixture on the stove to 250°F (roughly medium-high),
5 stirring occasionally with a spatula to ensure everything is thoroughly mixed. Be careful not to prolong this step, as the sugar syrup can overcook and start to caramelize, altering the color, taste, and texture. The syrup should be clear to light yellow.
6 Reduce the heat to the lowest setting, allowing the temperature to drop to approximately 220°F before proceeding to the next step.
7 While the temperature is dropping, cut or tear the bloomed gelatin into four equal parts.
Once the saucepan has reached 220°F, add the gelatin pieces one at a time while mixing
8 thoroughly using the spatula. You may want to briefly remove the saucepan from the heat to prevent overheating. Overheating the gelatin can disrupt its structure, potentially altering the texture and color of the final product.
When the temperature reaches 200°F, gradually add the THC powder while mixing
9 thoroughly with a spatula. It is crucial to add the THC powder only after the mixture has reached 200°F to prevent unwanted decarboxylation.
Allow the temperature of the saucepan to continue dropping to around 120-150°F. This will
10 enable the “scum” to rise to the surface. In gummy manufacturing, “scum” refers to decomposed proteins that can affect the clarity of the gummies. This process typically takes about 15-20 minutes.
Use a spatula to gently scrape off the “scum” from the surface of the mixture and dispose of
11 it. Ensure the temperature remains low enough to keep the mixture melted. If the mixture is
simmering, the temperature is too high and needs to be reduced.

Water-Soluble THC Powder + Gellies + Terpene Effects
After removing the “scum,” add 9 grams of Abstrax Gellies flavor, 5 grams of your desired AI
12 Terp Effects, and 6 grams of citric acid to the saucepan. Mix slowly and thoroughly until the citric acid is fully dissolved and the flavor is evenly dispersed throughout the mixture.
13 The solution is now ready to be deposited into the gummy molds. Here are several methods you can use: Pour and Scrape Method: Pour the mixture into the molds, then use a spatula or bench scraper to ensure each mold is completely filled with the gummy mixture. Plastic Pipette Method: Use a pipette to fill each mold individually with the gummy mixture until it reaches the top. This method is less efficient but more precise, making it ideal for research and development (R&D) benchtop tests with smaller batch sizes, though it may not scale well for large production. Funnel Dispenser method: Pour the entire gummy mixture into a funnel dispenser and fill each mold until it reaches the top. Be careful not to overfill the molds. Machine Depositor method: Recommended for large-scale operations, this method uses a machine to deposit the mixture into molds. If purchasing a machine is not feasible, partnering with a co-manufacturer is highly recommended to efficiently scale up your gummy production.
14 Once each mold has been filled, allow the gummies to set at room temperature or in the refrigerator. The setting process should take approximately 30 minutes to an hour.
15 After the gummies are fully set, carefully remove them from the molds and store them in glass jars or your preferred packaging method. END

Desired THC per Gummy: 5 mg Purity of Liquid Diamonds: 95%

Calculate the Amount of Liquid Diamonds Needed Per Gummy:
