CAUTION! To prevent risk of injury, stay clear of the knife guide slots
when the unit is turned on.
When using electrical appliances, basic safety precautions should always be

To protect against electrical hazards, do not immerse the Chef’sChoice® DC 220 sharpener or detachable power supply cord in water or other liquid.

Make sure that only clean knife blades are inserted in the sharpener.

Turn the appliance OFF, then unplug from the outlet when not in use, before assembling or disassembling parts and before cleaning. To unplug, grasp the plug and pull from the outlet. Never pull from the power cord.

Avoid contacting moving parts.

Do not operate any appliance with a damaged cord or plug or after the appliance malfunctions, or is dropped or damaged in any manner. Do not incinerate this appliance even if it is severely damaged. The batteries can explode in fire.

The Chef’sChoice® DC 220 sharpener is designed to sharpen American and European style knives as described in following sections. Do not attempt to sharpen scissors, ax blades or any blade that does not fit freely in the slots.

Do not let the cord hang over edge of table or counter or touch hot surfaces.

When the power is in the “ON” position (Green flash on switch is exposed when “ON”), the Chef’sChoice® sharpener should always be on a stable countertop or table. See ON/OFF power switch positions on page 4.

CHARGING THE DC 220 SHARPENER
Plug the adapter into the sharpener, then plug the cord into a wall outlet.
For Optimum Performance and Battery Life, charge fully before use. The attery
akes 45-60 minutes to recharge. One battery charge will last for up to 45
minutes of continuous sharpening.
Use only with Listed/Certified ITE Power Supply. Do not use an extension cord.
Plug charger directly into electrical outlet. Use only with the charger
rovided with the appliance. Do not attempt to use this charger with any other
product. Likewise, do not attempt to charge this appliance with any other
harger. Carefully route the power supply cord to avoid damage from the knife
blades while sharpening.

DESCRIPTION OF THE CHEF’SCHOICE DIAMOND HONE KNIFE SHARPENER DC 220
This advanced Diamond Hone Sharpener has two motor driven sharpening Stages
1 and 2.In Stage 1, motor-driven, highly effective diamond abrasive isks
remove the dull edgeand create a sharp fully faceted edge at the conventional
20 degrees. In Stage 2, similartechnology is used with finer diamond brasives
at a slightly larger angle to create a smallsecond bevel along the edge. This
sharpening and honing process leaves a stronger – archshaped profile along the
edge for greater strength and durability.
In Stage 1 and 2 there are two knife-guiding slots. These are referred to as
the left and right slots that sharpen alternately the right and left side of
the lade’s edge. When sharpening, always follow an alternating pattern of
sharpening in the right and left slots. This pattern insures that both
sides(facets) of he edge are sharpened alike for better control of the
cutting action of the blade. You will find that the DC 220 can create and
maintain an exceedingly harp and effective edge on all your conventional fine
edge and serrated cutlery. Always use the sharpener with the stage numbers 1
and 2, facing you.
USING THE DC 220 SHARPENER
Note: Always clean your knife before sharpening in the DC 220! For your
safety, keep your fingers clear of the blade edge at all times.
Try a practice pull through the sharpener with the power “OFF”. Slip the knife
blade smoothly into the left slot between the left angle guide of Stage 1 or
tage 2. Do not twist the knife. Move the blade down in the slot until you feel
it contact the diamond disk. Pull it towards you lifting the handle slightly
s you approach the tip. This practice pull will give you a feel for the spring
tension. Remove the knife and read the following instructions specific o the
type of knife you will be sharpening.
STAGE 1
To sharpen, place the sharpener on the table gripping it securely with your
hand. Push on the power switch. Insert the knife blade, (Figure 1) near its
andle, into the far left slot of Stage #1 and allow the left face of the
blade to rest on the left face of the slot as you pull the knife toward you.
The knife dge should be in sustained moving contact with the rotating diamond
abrasive coated disk. Only light downward force will be necessary as you pull
the lade toward you. Listen carefully to insure your knife maintains good
contact with the rotating diamond disk. Each pull should be at a speed of
around ne inch per second (6” blade=6 second pull).
Always pull the blade toward you. Never push the blade away from you. Make one
pull of the blade in the left slot as described above and then repeat the ame
procedure in the adjacent (right) slot of Stage.
- As you pull the knife through the right slot, (see Figure 2), hold the right face of the knife against elanted right face of the slot. If your knife, Figure

Caution! See text.before sharpening, is not very dull you will find that
only about 5 pairs of pulls, alternating in the left and right slots of Stage
1, will be sufficient to create burr on the blade. However, if the knife is
initially very dull you may find that 10 or more alternating pairs of pulls in
the left and right slots of Stage 1 ill e needed the first time as you
reshape and sharpen the old edge. Before leaving Stage 1 it is important to
examine the knife edge to insure there is a mall burr along one side of the
edge.
Figure 3 illustrates how to check for the burr. Proceed as follows: If your
last sharpening pull was in the right slot there should be a small burr on the
ight ide of the blade edge. If the last pull was in the left slot there
should be a small burr along the left side of the edge. If there is no burr,
repeat aking airs of alternating right and left pulls until you create a
small burr along the edge. (Sometimes it is easier to create the burr if you
pull the blade slower.) onfirm there is a burr along the edge after each
pull. Only then are you are ready to sharpen in Stage 2.
STAGE 2
In general only two pairs of pulls (6” blade = 6 second pull) followed by one
pair of fasterpulls (1-2 seconds each for 6” blade) in Stage 2 will be
necessary to obtain a razor sharpedge. Make alternating pulls rapidly in the
left and right slots. After doing so, the knife is ready to use.
RESHARPENING THE KNIFE EDGE
To resharpen, turn on the sharpener and follow the procedure for Stage 2 as
described above, making one to two (1-2) alternating pulls. Then test the dge
for sharpness. If necessary, resharpen again starting in Stage 1 followed by
one to two (1-2) pairs of pulls in Stage 2. Generally you should be able to
esharpen several times using only Stage 2 before having to resharpen in Stage
- SERRATED BLADES
Serrated blades can be sharpened in Stage 2 (see Figure 5). If the serrated edge is on theleft side of the knife, place in the left slot and vice versa. enerally, three to five pulls in
Stage 2 will be adequate. If the serrated knife is very dull, more pulls will be needed. Because of their saw-like structures, the edges of serrated blades will ever appear to beas “sharp” as the edge on a straight edge knife.

ASIAN BLADES
The sharpener is not recommended for Asian knives.
CERAMIC KNIVES
The sharpener is not recommended for ceramic knives.
SCISSORS
Do not attempt to use the sharpener to sharpen scissors. The Legacy Companies
does manufacture special sharpeners designed just for scissors.
BRANDS OF KNIVES
The sharpener will put an excellent edge on most conventional metal
Euro/American styleknives regardless of brands, including Henckels, Wüsthof,
Sabatier, Lamson and GoodnowGlobal, Russell Harrington, Chef’sChoice,
Messermeisser, Forshner, Mundial, Cuisinart, Kitchen Aid, Shun and many, many
more.
TEST FOR SHARPNESS
To test for sharpness and cutting ability of your fine edge knives, hold a
sheet of paper vertically by its upper edge and carefully cut down through the
heet a small (but safe) distance from your fingers. A sharp edge (on a
straight edge blade) will cut smoothly without tearing the paper.
Alternatively try cutting a tomato. The knife should penetrate the skin of the
tomato andcut through it on the first pull without applying significant force
to the knife.
MAINTENANCE
- The exterior of the sharpener can be cleaned with a damp soft cloth.
- Periodically shake out and dispose of the metal sharpening dust by inverting the sharpener and lightly tapping it onto a newspaper, paper towel, or other paper sheet.
- No oils or other lubricating liquids are necessary with this sharpener.
SUGGESTIONS
- Always clean all food, fat and foreign materials from the blade surfaces before sharpening or resharpening. If badly soiled, use detergent and water to clean.
- Always pull the blades at the recommended speed and at a constant rate over length of blade. Never interrupt or stop the motion of the blade when in contact with abrasive disks.
- Carefully follow the detailed procedure to extend the useful life of your knives.

The edge of the knife blade, while sharpening, should remain in contact with the rotating abrasive disks as the knife is withdrawn from the guiding slot. To sharpen the blade near the tip of a curved blade, lift the handle up slightly as you approach the tip of the blade but just enough so that the edge as it is being sharpened maintains audible contact with the honing or stropping disk.

- To increase your proficiency with the Chef’sChoice® DC 220, learn how to detect a burr along the edge (as described on page 4). While you might be able to sharpen well without using this technique, it is the fastest way to determine when you have sharpened sufficiently in the preliminary steps. This will help you avoid oversharpening and ensure incredibly sharp edges every time. Cutting a tomato or a piece of paper is a convenient method of checking for finished blade sharpness.
- Use only light downward pressure when sharpening – just enough to establish secure contact with the abrasive disk.
- If your knife has a significant choil you may find it helpful to place your index finger within or just behind the choil (see Figures 6 and 7) as you insert the blade in the sharpener (Be careful! The tip of the choil may be sharp). Your finger can act as a “stop” and prevent you from inserting the blade so far that the choil area will catch on the front stop-bar of the sharpener as you withdraw the blade. A little practice will help you perfect this technique. As you insert the blade let your finger slide down the front of the sharpener.
- Do not attempt to use this sharpener to sharpen either ceramic knives or scissors.
