Operating information for this equipment has been prepared for use by
qualified and/authorized operating personnel.
All installation and service on this equipment is to be performed by
qualified, certified, licensed and/authorized installation or service
personnel, with the exception of any marked with a in front of the part
number.
Service may be obtained by contacting the Factory Service Department, Factory
Representative or Local Service Agency.
DEFINITIONS
QUALIFIED AND/AUTHORIZED OPERATING PERSONNEL
Qualified or authorized operating personnel are those who have carefully read
the information in this manual and are familiar with the equipment’s functions
or have had previous experience with the operation of the equipment covered in
this manual.
QUALIFIED INSTALLATION PERSONNEL
Qualified installation personnel are individuals, a firm, corporation or
company which either in person or through a representative are engaged in, and
are responsible for:

The installation of gas piping from the outlet side of the gas meter, or the service regulator when the meter is not provided, and the connection and installation of the gas appliance.
Qualified installation personnel must be experienced in such work, be familiar with all precautions required, and have complied with all requirements of state or local authorities having jurisdiction.
Reference in the United States of America — National Fuel Gas Code ANSI Z223.1 (Latest Edition). In Canada — Canadian Standard CAN1-B149.1 NAT. GAS (Latest Edition) or CAN1-B149.2 PROPANE GAS (Lastest Edition). -
The installation of electrical wiring from the electric meter, main control box or service outlet to the electric appliance. Qualified installation personnel must be experienced in such work, be familiar with all precautions required, and have complied with all requirements of state or local authorities having jurisdiction. Reference: In the United States of America — National Electric Code ANSI NFPA No. 70 (Latest Edition). In Canada — Canadian Electric Code Part 1 CSA-C22.1 (Latest Edition).
QUALIFIED SERVICE PERSONNEL
Qualified service personnel are those who are familiar with Vulcan equipment
who have been endorsed by the Vulcan-Hart Corporation. All authorized service
personnel are required to be equipped with a complete set of service parts
manuals and stock a minimum amount of parts for Vulcan equipment.
SHIPPING DAMAGE CLAIM PROCEDURE
For your protection, please note that equipment in this shipment was carefully
inspected and packed by skilled personnel before leaving the factory. The
transporation company assumes full responsibility for safe delivery upon
acceptance of this shipment.
If shipment arrives damaged:

VISIBLE LOSS OR DAMAGE —
Be certain this is noted on freight bill or express receipt and signed by person making delivery. -
FILE CLAIM FOR DAMAGES —
Regardless of extent of damage. -
CONCEALED LOSS OR DAMAGE —
If damage is unnoticed until merchandise is unpacked, notify transportation company of carrier immediately, and file “concealed damage” claim with them. This should be done within (15) days of the delivery date.
Be sure to retain shipping container for inspeciton.
We cannot assume responsibility for damage or loss incurred in transit. We
will, however, be glad to furnish you with the necessary documents to support
your claim.

VULCAN ELECTRIC UNITS ARE MANUFACTURED FOR USE WITH THE VOLTAGE SPECIFIED BY THE UNIT RATING PLATE. FOR INSTALLATION PROCEDURES IN THE UNITED STATES OF AMERICA REFER TO: NATIONAL ELECTRICAL CODE, ANSI/FNPA No. 70 (LATEST EDITION).
3a. A wiring diagram for this unit will be found packaged in a zip lock bag placed inside the filter vessel. Retain this diagram for future use. Also a wiring diagram decal is located on the inside front cover of the filter vessel.

In the event of a power failure, the unit will automatically shut down. Should this happen, turn the power switch OFF. Do not attempt to start the filter until main power is restored.
CAUTION: Operation of this equipment involves the handling of HOT oil and parts. Exercise extreme caution at all times.
CAUTION: Installation and servicing of this equipment may require 120 volt electric power to perform unit function test procedures. Exercise extreme caution when performing such precedures.

DOOR SWITCH
Each CCFD-1C & -2C fryer is equipped with a door safety switch that will
automatically shut the unit down when the fryer door is opened. However,
operating and service per- sonnel should not rely on door switch to shut unit
down while working inside the door panel control area.
WARNING:
Do not rely on door switch to shut unit power down. Push fryer power switch
“OFF” before entering the inside door panel control area for cleaning,
filtering or servicing. By- passing the fryer door switch should be done by
service personnel only.
CYLINDRICAL (SOLBERG) AIR FILTER CHECK
Necessity of changing the air filter in a CCF Series Fryer may be determined
by utilizing the following instrumenta- tion and testing procedures.
TOOLS REQUIRED:
Dwyer Model #25 Manometer/Slope Gauge Small blade screwdriver
- Assemble the manometer/slope gauge kit.
- Open fryer door and connect manometer/slope gauge tube end to pressure tap on the filter lid, and to the “low” outlet on the gauge. (From this tap you will be measuring a vacuum.)
- Turn unit “on”. Open pressure tap utilizing the small blade screwdriver.
- Watch manometer reading. If reading is near to or above -1.6” W.C. (water column), replace the filter as- sembly. New filter assembly, when tested, should read approximately -0.2″ W.C.
NOTE: If model #25 manometer is not available, then a slack tube manometer can be used. Readings, however, will not be as accurate.
BLOWER AIR ADJUSTMENT
SERVICE NOTE
Insufficient gas inlet pressure will cause problems with blower air adjustment
and proper unit functioning. The natural gas inlet pressure of the CCF
Catalytic Fryer should be at least 5.0″ W.C. (Water Column) with the unit in
operation. The propane gas inlet pressure should be at least 12.0” W.C. while
the unit is in operation. Check the inlet pressure supply for these read- ings
as they apply before making blower air adjustments.
NOTE: The critical air adjustment for each burner has been factory tested
and set. Further adjustment should not be required unless the fryer is being
installed above 3000 ft. elevation or burner or fan replacement has been made.
To make proper air adjustment, look through burner view port sight hole and
turn fryer “ON”.
Let burner run approximately 30 seconds.
Follow steps 1 thru 4 below:
NOTE: When making air adjustment, work on one side at a time.
- Remove black plug button from the air adjustment box of the burner side being adjusted.
- Insert 4″ allen wrench into the air adjustment box and remove locking set screw.
- Insert allen wrench into adjustment access hole. A blue burner surface observed through the viewing port indi- cates excess air. Slowly turn allen wrench coun- terclockwise until a maximum red glow is obtained on the burner surface. A dull orange/yellow flame indicates insufficient air. Slowly turn allen wrench clockwise until amaximum red glow is obtained on the burner surface. Insufficient or excess air will cause lighting problems. (Refer to color trend guide chart.)
- Reinstall locking set screw and black plug button.
- Repeat steps 1 thru 4 as required for second burner.
NOTE: All CCF Catalytic Fryers are equipped with a blower air filter. This filter must be in place at all times during unit operation. Failure to use air filter will result inunit breakdown and will automatically void all warran- ties associated with the unit.
The air filter is a critical part of the unit functioning and should be
checked frequently. Change air filter when soil- ing becomes apparent.
Detail D1 represents Winjammer Blower Air Filter Con- struction.
INSTRUCTIONS FOR SETTING IGNITOR LOCATION
This setting will provide optimum ignition reliability and prevent ignitor
board lockout. The ignitor location is factory set and should not require
adjustment unless the ignitor hasbeen replaced or has been knocked out of
adjustment.
NOTE: Complete all burner flame adjustments before proceeding.
- Obtain a D.C. micro amp meter with good resolution in the 2 to 8 micro amp range.
- Measure flame current by connecting the meter in series with the ignitor. Clip (1) meter lead to the black flame sense wire and the other to the ignitor flame sense electrode.
- While the burner is operating, observe the micro amps registered on the meter. If reading is less than 4 micro amps, loosen the ignitor assembly retaining screws and adjust the ignitor until 4 or more micro amps are attained.
- Retighten the ignitor assembly retaining screws. Op- timum ignition has now been achieved.
NOTE: The ignitor assemblies of the fryer are located behind the control housing compartment. Access may be obtained by following procedures for the removal of the control box housing in section B1 thru B9. See Detail F.KX THERMOSTAT CALIBRATION FOR CCFS-1 & -2 SERIES FRYERS
Thermostat calibration is factory set before unit shipment. Further
calibration should not be performed unless unit temperature is ranging beyond
=5° of the thermostat set- ting.
Tools required: Potentiometer or good grade thermome- ter (do not use bi-metal
thermometer) and a %¢” flat blade screwdriver.

Shortening must be at the proper level as indicated by the “normal” shortening level line imprinted on the fryer door tank wall. Insert temperature measurement device to the center back area of the fryer tank.
-
Turnthermostat knob to amedium temperature setting.
-
Allow temperature to stabilize. Stabilization will be con- firmed by the temperature reading of the measuring device remaining the same over a period of several minutes.
-
After stabilization period, compare the temperature reading of the measuring device to that of the thermos- tat dial setting. If there is a difference of more than +5° between these two readings, thermostat calibra- tion is required.
Thermostat calibration is to be performed as outlined in steps 5 thru 8. -
Remove thermostat knob from control panel.
-
Insert flat blade screwdriver into slot provided in the thermostat stem.
-
Using screwdriver, rotate stem clockwise to decrease and counterclockwise to increase temperature. Vs turn equals an 18° change in temperature. Estimate rotation required to obtain proper thermostat readings.
-
Remove screwdriver and replace thermostat knob onto stem. Recheck fryer temperature readings by following steps 1 thru 4.
POTENTIOMETER CALIBRATION FOR CCFD-1 & -2 SERIES FRYERS
Potentiometer calibration is factory set before unit ship- ment. Potentiometer
calibration should not be performed unless unit temperature is not registering
within =5°F (3°C) the potentiometer knob.
Check potentiometer calibration as follows:
Tools required: Digital pyrometer and holder, 4″ flatblade, screwdriver, maple
paddle.

The shortening must be at the proper level as indi- cated by the indicator line on the vat wall.
-
Insert a digital pyrometer, alnor pyrometer or a deep fat thermometer at the rear of the fryer exactly where the computer probe would go.
-
Set the potentiometer knob at the correct cooking temperature and turn on unit.
-
Allow shortening temperature to stabilize by agitating the shortening using a maple paddle. Let the fryer cycle on and off after reaching the desired tempera- ture at least three times.
-
After the stabilizing period, the instant the burner ac- tuates (as noted by the burners “ON” light turning on), the shortening temperature should be +5°F (3°C) of the thermostat setting.
-
If it is within =5°F (3°C) you are finished calibrating.
If not, follow steps 7 thru 10 for recalibration. -
Loosen the set screw in the potentiometer knob. Ro- tate knob without moving shaft and set the knob to match the pyrometer reading.
-
Retighten the set screw.
CAUTION: Do not overtighten. -
Turn the dial to desired temperature.
-
Repeat steps 4, 5 & 6.
NOTE: Do not calibrate using new shortening un- less you agitate the shortening as indicated in step 4.
SECTION A — CCFS SERIES FRYERS
REMOVAL OF MODULAR CONTROL BOX TO ACCESS CONTROLS, IGNITORS, BURNERS AND TANK PROBES
For servicing of control panel accessories, ignitor andtem- perature control
boards, follow steps A1 thru A4. For ser- vicing of high limit, ignitors,
burners or tank probes, follow steps A1 thru A13.
NOTE: During servicing, before installing any new probe, wrap threaded
probe end with teflon tape to prevent tank leakage.
To gain access to control components:
A1. Remove (2) screws from the upper right and left hand corners of the
control frame (photo A1).A2. Open fryer door and remove (2) screws
located be- neath the lower front channel right and left hand sides (photo
A2). A3. Detach control frame assembly from unit
body sides and modular control box assembly (photo A3).A4. To remove thermostat or completely remove control panel from
unit, pull off thermostat knob (photo A4), disengage (2) screws holding
thermostat to control panel (photo A4.1). Disengage thermostat wire con-
necting pins (photo A4.2). Disconnect panel wire har- ness connector plug
(photo A4.3). Lift panel away from unit. Ignitor boards and reset buttons are
now also readily accessible for servicing.
AS5. Disengage (4) screws positioned along the right and left hand control box front side flanges (photo A5). A6. Disengage high limit harness connector plug. (photo AB)A7. Remove ignitor caps (photo A7)
A8. Remove ignitor wire (photo A8).A9. Disengage (4)
screws mounting modular control box to the high limit box (photo A9).A10. Lift modular control box assembly away from unit front frame
and disconnect high limit connector plug (photo A10). A11. To gain convenient
access to burners, ignitors, high limit and tank probes, disconnect main wire
harness connector plugs and probe connector plugs (photo A1) A12. Disconnect
ignitor boot and wiring. Control box may now be completely disengaged from the
unit.
A13. Reattach modular control box assembly to unit by reversing steps A1 thru
A13.
SECTION B — CCFD-1 & -2 SERIES FRYERS
REMOVAL OF MODULAR CONTROL BOX TO ACCESS CONTROLS, IGNITORS, BURNERS AND TANK PROBES
For servicing of control panel accessories, ignitor and tem- perature control
boards, follow steps B1 thru B3.
For servicing of ignitors, high limit, burners or probes, follow steps B1 thru
B11.
NOTE: During servicing, before installing any new probe, wrap threaded probe
end with teflon tape to prevent tank leakage.
To gain access to control components:
B1. Remove (2) screws from upper corners of the control frame (photo
B1).B2. Open fryer door and remove (2) screws
located be- neath the lower front channel right and left hand side (photo
B2).B3. Detach control frame from unit. If you
wish to remove control frame completely from unit, disengage wire harness
connector (photo B3).
NOTE: From this point you can now completely ac- cess the control panel
accessories. To service burners, ignitors, high limit and
tank probes, remove control frame as follows:
B4. Disengage (4) screws positioned along the right and left hand control box
front side flanges. B5. Remove ignitor caps and ignitor wires
from the ignitor boards (photo B5).B6. Disengage (4) screws
securing housing to high limit bracket (photo B6).B7. Disconnect high limit wire connector plug (photo B7).B8. Remove control box assembly from fryer frame (photo
B8).B9. Lift modular control box away from the
fryer body frame. Disconnect the probe plug connector (photo B9) and ground
wire (photo B9.1).B10. Disconnect main power wire harness plug
connec- tor. The modular control box may now be completely removed to freely
service the ignitor assemblies, burner assemblies, high limit system and tank
probes. B11. Reattach modular control box assembly by reversing steps B1 thru
B11.
SECTION C — CCFD-1C & -2C SERIES FRYERS
REMOVAL OF MODULAR CONTROL BOX TO ACCESS CONTROLS, IGNITORS, BURNERS AND TANK PROBES
For servicing of computer panel, ignitor modules and inter- face boards,
follow steps C1 thru C3.
For removal of ignitors, high limit, burners or probes, follow steps C1 thru
C8.
NOTE: During servicing before installing any new probe, wrap threaded
probe end with teflon tape to prevent tank leakage.
To remove complete panel or gain access to reset button, ignitor and interface
boards:
C1. Remove (2) screws from the top left and right hand corners of the control
frame front (photo C1). C2. Open fryer door and remove (2) screws
located be-neath the lower front channei right and left hand sides (photo
C2).C3. Detach the computer control frame from
the fryer body. If complete removal is desired, disconnect wir- ing harness
plugs. Panel may now be completely removed to access computer removal or
ignitor and interface boards (photo C3).To service burners, ignitor
assemblies, high limit and tank probes. Remove control housing as follows:
C4. Disconnect all remaining wire leads and ignitor wires from the control
area (photo C4).C5. Disengage (4) screws positioned along
the right and left hand box front side flanges (Ref. photo C4).
C6. Disengage (4) screws securing control box to high limit bracket as shown
under step B6 of CCFD fryers.
C7. Disconnect high limit wire connector plug as shown under step B7 of CCFD
fryers.
To service burners, ignitor assemblies, high limit and tank probes, remove
control housing as follows:
C8. Remove modular control box assembly from fryer frame similar to step B8.
Disconnect main power wire harness plug. Now control box may be completely
removed from unit. This will allow complete servicing access to the burners,
ignitors, high limit and unit tank probes (photo C8).
TROUBLESHOOTING

TROUBLE LIGHT ON. NO HEAT.| Oil temperature above limit trip point.| Allow
fryer to cool to below 375°F (190.6°C). Turn off main power switch, then “ON”.
Stuck or defective solenoid valve.| Replace valve.
Temperature control defective.| Replace temperature controller.
SLOW RECOVERY| Gas pressure low.| If manometer is available, adjust to correct
pressure.
TROUBLE LIGHT FLASHES MOMENTARILY THEN HEATING LIGHT COMES ON WHEN SYSTEM
CALLS FOR HEAT.| This is a normal operation.| None required.

DIAGNOSTIC LIGHT CHART
Before using the chart complete the following:
- The power light must be on and the first and/or second high limit lights off. If the first and/or second high limit lights are on, refer to the troubleshooting section re- garding this problem.
- Turnthe power switch off. Set temperature control knob to temperature higher than the actual oil temperature.
- Observe the pattern of the diagnostic lights at the mo- ment you turn the power switch back on.
- If fryer is IN fat melt, observe the light pattern 45 sec- onds after the power switch has been turned on.
- If fryer is NOT in fat meltimmediately, observe the light pattern. Pattern remains valid for 3 seconds.
To assist you in reading the chart, keep in mind the follow- ing tips:
- What is the problem you are having?
- What lights are on or off?
- Remedies are listed in order as to those most likely to correct the problem:
LIGHT OFF – LIGHT ON –
LIGHT PATTERN KEY
ILLUMINATED LIGHT INDICATES:
- Power into left hand ignitor board.
- Power out of left hand ignitor board.
- Power into right hand ignitor board and power out of the right hand multi function temperature control board of the split vat fryer only.
- Power out of right hand ignitor board.
NOTE: The full vat unit employs a (3) light pattern.
The split vat unit employs a (4) light pattern.
The diagnostic chart assumes that both the left hand and right hand vats are
operating under the same conditions.
