WHAT IS SOUS VIDE COOKING?
Sous Vide (French for’under vacuum’), also known as low temperature long time
cooking, is a method of cooking in which food is placed in a plastic pouch or
a glass jar and cooked in a water bath for longer than usual cooking times
(usually 1 to 7 hours, up to 72 or more hours in some cases) at a precisely
regulated temperature. The temperature is much lower than usually used for
cooking, typically around 55 to 60 °C (130 to 140 °F) for red meat, 66 to 71
°C (150 to 160 °F) for poultry, and higher for vegetables. The intent is to
cook the item evenly, ensuring that the inside is perfectly cooked without
overcooking the outside, and to retain moisture. The KitchenBoss precision

Smart Tip: “Sous vide cooker” is suitable for deep stainless steel pots
and food grade plastic pots as containers.
General sous vide cooking steps are:
- Preheat your water bath to the desired cooking temperature according to the sous vide recipe.
- Seal the ingredients you wish to cook in a sous vide bag (Note: we recommend you using the KitchenBoss•vac bag and the vac sealer). You may also place your I ingredients in a canning jar filled with a neutral-flavored oil and sealed tightly.
- Submerge the vacuumized bagged food or canning jar in a water bath and let it cook until the thickest part of the food has reached its target temperature.
- Upon finishing sous vide cooking, if desired, give your food a quick sear with a blowtorch or a hot skillet, and it’s ready to serve!

Unlike cooking on a stove or in the oven, the temperatures used in sous vide
cooking is relatively low (well below boiling temperature). By setting the
right temperature for your ingredients, your food will not overcook if you
leave it in the water bath- it cannot get hotter than the temperature you set!

First activation settings

Language Setting (Model: G320/G321/G322)
After seeing the KitcheBoss animation, it stays on the language setting menu.- Model G320: rotate the smart dial left or right direction to select your desired language; Model 321 & G322: press the’+’ or’-‘ button to select the your desired language.
- Press the “on/off” button to confirm.
- Next, it enters the temperature unit and mute setting (see next section).

Temp. Unit & Mute Setting (Model: G320/G321/G322)

Model G320: turn the smart dial left or right to select °For °C ;
Model 321 & G322: press the’+’ or’-‘ button to select °For °C. -
Once selected, press the “SET” key to enter the Mute setting;

Do the same like above (turning the smart dial or pressing’+/-‘) to select Mute / Unmute.
-
Finally press “ON/O FF” button to CON FIRM, and will enter to the Menu page.

General Settings
In standby Mode:
-
Long press the “SET” button for 3 second to access the SETUP mode.
-
Press ‘SET’ once to choose your setup (Temp unit/ Buzzer/ Language);
Temp: When the TEMP option blinks, turn(Model G320) / Press(Model G321/322)’+/-‘to switch the temperature unit between °C/”F and press ‘SET’ to confirm.
Buzzer: Press ‘+/-‘ again to turn the buzzer on or off. You can mute the buzzer by selecting it to’OFF’and pressing’SET’to confirm.
Language Selectivity:- Turn the Smart Dial(Model G320)or the ‘+/-‘ keys(Model G321/G322)to choose the desired language.
- Press ‘SET’ to confirm once the desired language is highlighted.
Restore: to restore the factory setting especially back to the recommended cooking temp & time. Select this selection and rotate the Smart Dial (G320) to reset, or press ‘+/-‘(G321 & G322)to reset.

To finish (EXIT) the SETUP: Press the “confirm” ( ) key to exit the SETUP setting.
The Integrated Cuisine
The Kitchen Boss G320 / G321 / G322 is the 1st sous vide machine in the
world which is integrated with a default menu with recommended settings for
various kinds of dishes. Thanks to the colorful display, you can simply choose
the cuisine you want to cook, and the machine takes care of the rest. The
default menu recommends an appropriate combination of cooking temp and time
which is precisely tuned by our Kitchen Boss Sous vide Chef team in the US.
Upon startup, the machine enters a default steak menu
showing the recommended temp and time for sous-vide cooking. Turn the Smart Dial (Model 320) or Press’+/-‘ buttons {G321/G322) to select recommended dishes and the five customized cuisine setting, named’ Style 1/2/3/4/S'(Fig.2) (see ‘Custom Recipe Setting’ in latter section).
Customized Cuisine Setting
USER INTERFACE

START/STOP: By press once to start or stop the machine.

LED BLUE: Setting or standby/pause state.
-
LED RED: The machine is cooking.
‘CONFIRM’: In SETUP mode, press the “CONFIRM” ( ) button to -
confirm any settings and exit SETUP mode.
-
Note: when unattended for a few minutes, the machine automatically enters sleep mode to save energy (with flashing blue LED).
SET:
- Long press the “SET” key for 3 seconds to enter the system setting {details please refer to ‘SETUP YOUR MACHINE)
- PRESS ONCE: you can set the temp. by the’+/-‘ buttons or the SMART DIALER (only on G320 model) “+/-“
- STAND ALONE PRESSING {G321/G322) or ROTATION Smart Dial (G320) : this is to select different recipe.
- ASSOCIATING the” SET” key:
TEMP setting: when the display is at your chosen cuisine. Press ‘SET’,
the temp setting will flash and you can select the”+/-“key once to add/reduce
0.1 °C/° F.
TIME setting: press again ‘SET’, the default ‘TIME’ flash then you can
select the”+/-” key to adjust cooking temp and time.
- LONG PRE SS(only G321/G322): to increase or decrease the”+” or”-” key continuously.
/PRESET:
Kitchen Boss cares about your busy daily life. If you have prepared a meal in
advance but want to start cooking right before you enjoy it, you can preset a
meal in advance using the “PRESET” function. Your food will start cooking
after a set countdown.
- In standby mode, choose a recipe then press” /PRESET”to enter reservation mode. The screen displays the countdown time.
- Turn/ press the”+” or”-” key to adjust the countdown time in 15-minute intervals.
- Press” /PRESET” again to start the countdown.
- When the countdown is completed, your Kitchen Boss Sous vide cook estarts cooking according to the chosen recipe.
Tip 1:
To exit ‘PRESET’ mode: press the “CONFIRM” ( ) key to exit.
Tip 2:
If there is no operation for 10 seconds in SETUP mode or standby state, the
screen will enter the sleep mode. Press any key to start the screen.
HOW TO START COOKING?
- Mounting Bracket setup: Prepare a 6-50 L container that can contain food (a 6- 501 metal pot is recommended) and install the Mounting Bracket of the KnahenBass•Sous vide Cooker to the side of the container and tighten the Container Mounting Screw (Z).
- Sous vide Cooker Installation: Place the Kit:ahenBass• Sous vide Cooker to the Mounting Bracket, Slide the latch ® to secure the machine.
- Filling Water: Fill water to the container until the water line rises to a suitable position between the MIN water line and MAX water line. Please pay attention to reserve enough space for placing food inside, such that the water level does not go over the MAX line after placing food.
- Food Pack Placement: Place the packaged (vacuumized) food in the container, leaving enough space between the packages for the water to circulate.
- Power Up: Plug in Kitchen Boss “Sous vide Cooker into a power socket. You I can now start cooking with your Kitchen Boss Sous vide Cooker by following the instructions on this manual in other sections.

Important Tips:
- Unplug the immersion heater before removing it from the liquid;
- After unplugging, the heating element will remain hot and should not be touched or placed on combustible surfaces.
- Appliance is not intended to be operated by means of an external timer or a separate remote-control system.
- If the supply cord is damaged, it must be replaced by the manufacturer, its service agent or similarly qualified persons in order to avoid a hazard.
RECIPE SETTINGS
Recommended recipe settings:
The Kitchen Boss Sous Vide Chef team recommends a series of cuisine with the
optimal cooking temperature and time and let you cook like a celeb and enjoy
the perfect Sous vide dish. In standby mode, (For G320) Turn the Smart Dial/
(For G321/G322) press the “+”or”-” key to select the recommended recipe to be
cooked, then press the “ON/ OFF” ( ) key to start cooking. It is this simple.
After selecting the recipe, you can further adjust the set temperature and
time of the recipe.
To adjust the set temperature and time of recipe, after choosing a recipe:
Temperature Setting:
- Press “SET” once, the temperature display blinks.
- Turn the Smart Dial or Press the”+” or”-” key to adjust the cooking temperature.
Time Setting:
- Press the “SET” again, the time display flashes.
- Turn the smart dial/ press the”+” or”-” key to adjust cooking time.
- Exit: Press once the “CONFIRM” ( ) to exit the temp & time setting and start cooking.
Custom recipe settings:
The Kitchen Boss Sous vide cooker conveniently lets you save up to 5 of your favorite custom recipe settings. Thus every time you just want to cook a custom dish, you can just load up your saved custom style. No need to record down all the nitty-gritty details, Kitchen Boss does that for you.
Accessing recipe Individualization:

ln standby mode, Turn the smart dial anticlockwise (for G320) or press the”-” key {for G321/G322) to access the custom individualization recipes.

Turn the Smart Dial/Press the “+/-” key to choose the recipe to be set (Style 1/ 2/3/4/5).

Press “SET” once, the temperature display blinks.

Turn the Smart Dial or Press the”+” or”-” key to adjust the cooking temperature.
Time Setting: -
Press the “SET” again, the time display flashes. Setting the custom recipe:

Save and Exit (to save setting):
- Press “CONFIRM” ( ) once to save and exit the temperature & time setting.

Start Cooking:
- Select the desired style and press “ON/OFF” ( ) to start cooking a saved custom recipe.
Tip: Custom recipe settings will be saved automatically.
MAINTENANCE,CLEANING&STORAGE
Cleaning:
After normal use, food particles or minerals in the water may form a sediment
on the outer casing of the machine. We recommend cleaning your Sous vide
cooker immediately.
After use:
- Turn off the cooker, unplug the power plug and remove the Kitchen Boss SOUS VIDE cooker from the water after the machine cools down;
- Remove the outer casing;
- Wash the interior heating tube and sensor directly under a tap;
- Add a drop of dish-washing liquid and lightly scrub with a sponge or brush if necessary.
- This machine is designed to be IPX7 Class waterproof. The upper part of the machine can be also washed directly under a tap,but we advise against immersing it in water for a long time.
Decalcification:
After long-term use, calcium in the water may form a sediment on the heating
tube. During cleaning, please add a decalcifying agent to the water, adjust
the temperature to between 40-50° C {104-122° F), start up the Sous vide
cooking process and allow it to operate for 10 minutes. Then, remove the plug
and clean the machine using the above method.
Warning: DO NOT cook food while washing to ensure effective cleaning, and
use water WITHOUT a decalcifying agent when the SOUS VIDE cooker is used for
cooking.
Storage:
After using your Kitchen Boss Sous vide cooker, please clean the machine and
wipe it dry with a cloth or paper towel. Store in a dry and well-ventilated
environment at a normal temperature; please do not place it in high-humidity
environments or store at high temperature.
