Product Information
The Blue Seal Electric Combi Steamer, model SAPIENS BOOSTED E610BSD, is a versatile cooking appliance designed for professional kitchens. It features a 6 x 1/1 GN capacity in the cooking chamber and a 10 x 1/1 GN capacity in the overall unit. With a range of cooking modes and preset recipe programs, it offers convenience and efficiency in the kitchen. The steamer also incorporates various intelligent features such as auto reverse fan rotation, self-diagnosis, and fault display. The construction of the steamer ensures a watertight chamber and comes with a rear ventilated double tempered glass door with an air chamber. The optional features include a right-hinged door and configuration for connection to an extraction hood. The appliance is equipped with the Vapour Cleaning System (VCS) for automatic washing.

Installation Requirements
For detailed installation instructions, refer to the unit’s installation
manual. The power connection requires a multi-pole circuit breaker and an all-
pole disconnection isolator switch to be installed near the appliance. The
supply line voltage should be 400-415V ~ 50Hz, 3P+N+E. Special voltage options
are available upon request. The steamer requires specific installation
clearances: 100mm at the rear, 500mm on the right side, and 50mm on the left
side. It should be installed on horizontal surfaces and not against
combustible walls, following local body regulations.

- NH2Cl (monochloramine): 0.2 mg/l

Product Usage Instructions
To use the Blue Seal Electric Combi Steamer, follow these steps:
- Ensure that the power supply is properly connected to the appliance. Use a multi-pole circuit breaker and an all-pole disconnection isolator switch.
- Make sure the supply line voltage is within the specified range (400-415V ~ 50Hz, 3P+N+E).
- Install the steamer on a horizontal surface with the required clearances: 100mm at the rear, 500mm on the right side, and 50mm on the left side.
- If heat sources are located near the right side of the steamer, maintain a minimum distance of 400mm for safety.
- Connect the cold water supply to the steamer. Ensure that the flow pressure is between 200-500kPa and the minimum water flow is 10 l/min.
- Use a soft water connection and install a shut-off valve with a return flow inhibitor and dirt filter.
- Make sure the water supply is R3/4 and the waste water connection is R50.
- Check the water quality to meet the specified criteria: total water hardness, pH, chloride, free chlorine, iron, and monochloramine levels.
- If necessary, apply water treatment as described in the installation manual.
- Load the cooking chamber with desired food items and select the appropriate cooking mode or preset recipe program from the LED bars.
- Monitor the actual cooking cycles displayed on the LED bars during program mode.
- For manual pre-heating, follow the instructions provided in the user manual.
- The steamer features an auto reverse function, which automatically reverses fan rotation for even cooking.
- The Intelligent Energy System optimizes and controls the delivery of energy output to maintain the best cooking temperature.
- In case of any faults or issues, refer to the self-diagnosis and fault display feature for troubleshooting.
- After use, the steamer can be cleaned using the Vapour Cleaning System (VCS) automatic washing system.
