Product Information

The BUFFET SERVER/GRIDDLE is a versatile kitchen appliance that can be used as a griddle or buffet server. It comes with handles for easy lifting and transportation, a clear pan cover, a food pan holder, a leg, a food pan handle, a grease cup, rubber feet for stability, and a temperature control dial.

Product Usage Instructions

Assembling Your Griddle:

  1. Place the griddle/buffet server upside down on a tabletop or countertop.
  2. Position the handle on the side of the griddle/buffet server, lining up the holes in the handles with the mounting bracket on the griddle/buffet server.
  3. Using a #2 Phillips screwdriver, securely attach the handle screws provided. Repeat steps to assemble the second handle on the opposite side of the griddle/buffet server.
  4. Place the assembled griddle/buffet server right side up on a flat surface and lift with the handles. Handles should feel tightly secured and should not wobble.

Using Your Griddle:

  1. Before using the griddle for the first time, wash the griddle, grease cup, food pans, and food pan covers in warm, soapy water.
  2. Always use the griddle on a dry, level, heat-resistant surface. Do not operate the griddle if it is damaged or if there are any loose parts.
  3. Preheat the griddle to the desired temperature before placing food on it. The temperature control dial allows you to adjust the heat accordingly.
  4. Use nylon, plastic, wooden, or rubber cooking tools on the non-stick surface. Smooth-edged metal cooking tools may be used with caution. Avoid using sharp-edged cooking tools that may scratch the surface.
  5. After cooking, set the temperature control dial to WARM if you want to keep the food warm or to OFF if you want to remove the food immediately. Disconnect the cord from the wall outlet and let the griddle cool before removing the temperature control and grease cup.

Using as a Buffet Server:

  1. Follow the same instructions as mentioned above for using the griddle.

Cleaning Your Griddle:

  1. Clean the griddle thoroughly after each use. Let it cool completely before cleaning. Remove the temperature control and grease cup and dispose of the grease.
  2. Immerse the griddle and grease cup in warm, soapy water. Wipe the temperature control with a damp cloth if necessary. Rinse and dry thoroughly.
  3. Clean the non-stick surface of the griddle with warm, soapy water and a nonmetal cleansing pad. Avoid using metal scouring pads or harsh scouring powders.
  4. Clean the non-coated aluminum underside of the griddle with warm, soapy water and a soap-filled steel wool scouring pad. Remove stains with a household cleanser.
  5. Rinse the griddle thoroughly with warm water and dry completely, including the temperature control socket area. Replace the grease cup.

  • This appliance has a polarized plug (one blade is wider than the other). To reduce the risk of electric shock, this plug is intended to fit into a polarized outlet only one way. If the plug does not fit fully into the outlet, reverse the plug. If it still does not fit, contact a qualified electrician. Do not attempt to modify the plug in any way.

OPERATING PRECAUTIONS

  • A short power-supply cord is provided to reduce risks resulting from becoming entangled in or tripping over a longer cord.
  • Longer, detachable power-supply cords or extension cords are available and may be used if care is exercised in their use. While use of an extension cord is not recommended, if you must use one, the marked electrical rating of the detachable power-supply cord or extension cord should be at least as great as the electrical rating of the appliance. If the appliance is of the grounded type, the extension cord should be a grounding-type 3-wire cord. The cord should be arranged so that it will not hang over the counter top or tabletop where it can be pulled by children or tripped over.
  • Do not place plastic cooking or serving containers or utensils directly on heating surface as melting of the plastic could occur.
  • Do not use temperature setting above 200°F (95°C) in warming applications.
  • CAUTION: Risk of fire or electric shock. Only operate this appliance with the WB #8 plug in place.
  • Do not attempt to repair this appliance yourself.

ASSEMBLING YOUR GRIDDLE

Note: The provided handles must be assembled on the Griddle/Buffet Server before use (unassembled models only).

USING YOUR GRIDDLE

BEFORE USING THE FIRST TIME:

  1. Wash griddle, grease cup, food pans and food pan covers in warm, soapy water with a dishcloth or sponge to remove any manufacturing oils. Rinse thoroughly and dry. Be sure the temperature control is removed and the socket is completely dried. Slide the grease cup securely in place below the drain hole on the griddle surface. It is recommended that the grease cup be used with any cooking application to help contain possible overflows or spills.
  2. Condition the non-stick finish by lightly wiping two teaspoons of cooking oil with paper toweling or a soft cloth over the entire cool surface. Let the cooking oil remain on the finish. Do not use butter or shortening to condition the non-stick surface.
  3. Check to ensure the handles/legs are secured tightly to the griddle base. To tighten, place cool griddle upside down on the tabletop. Tighten the handle/leg screws by turning in a clockwise direction using a #2 Phillips screwdriver. Do not over tighten as stripping of the screws can occur. Periodic tightening may be required.
  • A small amount of smoke and/or odor may occur upon heating due to the release of manufacturing oils – this is normal.
  • Some minor expansion/contraction sounds may occur during heating and cooling – this is normal.

USING YOUR GRIDDLE

  1. Always use on a dry, level, heat-resistant surface. Do not operate the griddle when hands are wet. Check to ensure the handles/legs are secured tightly to the griddle base. Attach the temperature control to the griddle with the dial set to the “OFF” position. Be sure the grease cup is securely in place below the drain hole on the griddle surface. Do not block airflow under the griddle. Plug cord into a 120 volt, AC electrical outlet ONLY.
  2. Refer to the Temperature Guide in this booklet for selecting the correct heat settings. If food is taken directly from the freezer, use the heat setting as indicated in the guide, but allow a longer cooking time. Most foods require a preheat period.
  3. The signal light on the temperature control will go out when the cooking temperature has been reached; add food. Heat may be increased or decreased, depending upon personal preference and the type or amount of food being prepared. The signal light will go on and off periodically to indicate that proper temperature is being maintained.
  4. Foods may be prepared with or without fats. When frying, the use of a small amount of butter, fat or oil will improve the flavor, color and crispness of foods. When frying fatty foods such as bacon or sausage, excess grease will drain into the grease cup through the drain hole located on the surface of the griddle. Do not remove the grease cup during cooking. Always allow the griddle to cool completely before removing the grease cup.
  5. Nylon, plastic, wooden or rubber cooking tools are recommended for use on the non-stick surface. Smooth-edged metal cooking tools may be used with care. Do not use sharp-edged cooking tools such as forks, knives or food choppers as scratching may occur. Minor scratching will affect only the appearance of the finish; it will not harm its non-stick property.
  6. When the cooking period is completed, set the temperature control dial to “WARM” for later serving, or set the dial to “OFF” if food will be removed immediately from the griddle. After the dial is set to “OFF,” disconnect the cord from the wall outlet. Let the griddle cool before removing the temperature control and grease cup.

USING AS A BUFFET SERVER

  1. Wash griddle, grease cup, food pans and food pan covers in warm, soapy water with a dishcloth or sponge to remove any manufacturing oils. Rinse thoroughly and dry.   3. This Buffet Server is equipped with two heat settings. Setting 1, “WARM,” is a minimum hold temperature of 140°F (60°C) and setting 2, “SIMMER,” is from 180°F to 200°F (82°C – 95°C). For best results, use setting 2 to quickly reach serving temperature, then adjust to setting 1 to “KEEP WARM.” Do not use temperature settings above 200°F (95°C) for buffet server or warming applications.

Note: You may use this unit either fully assembled with food pans or use the griddle base alone as a warming tray. Food placed on the warming base or in the food pans should be fully cooked and already hot as the Buffet Server is designed for keep-warm function only. To retain heat and moisture in foods, keep the food pan covers on the food pans when not serving.

CLEANING YOUR GRIDDLE

  1. Clean the griddle thoroughly after each use. Do not immerse the griddle in cold water when it is hot. Let the griddle cool completely, then remove the temperature control and grease cup. Dispose of the grease. Immerse the griddle and grease cup in warm, soapy water. Wipe the temperature control with a damp cloth if necessary. Rinse and dry thoroughly.
  2. Clean the non-stick surface of the griddle with warm, soapy water, using a non-metal cleansing pad. Do not use metal scouring pads or harsh scouring powders.
  3. Clean the non-coated aluminum underside of the griddle with warm, soapy water and a soap-filled steel wool scouring pad. Remove stains with a household cleanser.
  4. After washing, rinse the griddle thoroughly with warm water and dry completely, including the temperature control socket area. Replace the grease cup.
  5. Your griddle and grease cup, with temperature control removed, may be cleaned in an automatic dishwasher. Clean the grease cup in the top rack only. The underside of the griddle will discolor due to the minerals in the water and the high heat of the drying cycle. This will not affect the cooking ability of the griddle. Each time the griddle is cleaned in a dishwasher, the non-stick surface should be reconditioned with cooking oil to ensure stick-free cooking. Replace the grease cup.

SPECIAL CARE:

  1. A spotted white film may form on the non-stick surface. This is a buildup of minerals from food or water and is not a defect in the surface. To remove, soak a soft cloth in lemon juice or vinegar and rub on the cool surface. Wash the non-stick surface thoroughly, rinse and dry. Recondition the non-stick surface with cooking oil.
  2. The non-stick surface may also become stained from improper cleaning or overheating. To remove stains, clean the non-stick surface by the following method. Combine 1 cup of water and 1 tablespoon of ONE of the following cleaners: Dip-It® coffee pot destainer, automatic dishwasher detergent or dry oxygen bleach crystals. USE ONLY ONE OF THE ABOVE CLEANERS; DO NOT COMBINE. Make sure the grease cup is in place. Preheat the griddle to 225°F (107°C). Wearing rubber gloves dip the sponge into the water mixture and wipe over the surface.
    Continue the cleaning procedure until the mixture is gone. Turn griddle to “OFF” and allow to cool. Remove the temperature control and grease cup. Scour the non-stick surface of the griddle with warm, soapy water and a non-metal scouring pad. Rinse thoroughly and dry. Wash the grease cup in warm, soapy water and dry. Slide the grease cup back into the griddle. Recondition the non-stick surface with cooking oil before using.

TEMPERATURE GUIDE

Allow the griddle to preheat to the temperature shown, unless otherwise noted. The griddle has reached the desired temperature setting when the temperature control indicator light goes off. The quantities of food listed on the following chart are the maximum amount that can be grilled at one time.

FOOD SETTING COMMENTS
BACON (up to 1 lb.) 300°F (148°C) Place bacon on cold griddle. Set heat

control to 300°F. Turn and separate as bacon cooks, or separate cold slices with tongs. Fry 5 to 8 minutes per side.
EGGS (fried, up to 6)| 250°F (121°C)| Fry with or without oil or butter about 3 minutes per side.
FRENCH TOAST (4-6 slices)| 350°F (176°C)| Dip bread in milk-egg mixture. Place bread on ungreased griddle or sauté in butter. Bake 2 minutes per side.
FISH (up to 1.5lbs.)| 350°F (176°C)| Melt 2 Tbsp. cooking oil or butter on grill. Start frying skin side up. Fry 4 to 6 minutes per side.
FRANKFURTERS (1.5 lbs)| 300°F (148°C)| May be placed on griddle while it is preheating. Turn with tongs to prevent bursting. Total grilling time: 10 to 12 minutes.
HAM (2-3 slices)| 325°F (162°C)| Have slices cut ½” to 1” thick. Score fat and grill 10 minutes on each side. Add canned peach halves or pineapple slices during the last 5 minutes.
PANCAKES (4-6)| 350°F (176°C)| Add 2 Tbsp. melted butter or cooking oil to package mix batter. Bake until bubbles appear, turn and brown other side (about 1 minute per side).
POTATOES (fried, up to 1-1/2 lbs.)| 350°F (176°C)| Slice or shred raw or parboiled potatoes. Add 2 Tbsp. shortening or butter to grill. Brown potatoes, stirring occasionally.
SANDWICHES (4-6)| 375°F (190°C)|

  • Place filling between slices of bread.
  • Spread outside of bread with softened butter. Grill 3 to 4 minutes per side.

SAUSAGE (up to 1.5 lbs)| 300°F (148°C)| Brown about 8 to 10 minutes per side. Pork should always be served well done.
STEAK (3-4)| 400°F (204°C)| Score fat on sirloin, porterhouse, club, tenderloin or T-bone steak. Grill steak 1” thick 4 to 6 minutes each side (rare), 5 to 8 minutes (medium), or 8 to 10- minutes (well done). Turn with tongs.
WARMING/ SERVING| WARM
150°F to 175°F (65°C to 79°C)| Place food on griddle to warm. To keep warm until serving time, turn heat control down to “WARM” about 1 minute before cooking is completed.

Appliance 3 Year Limited Warranty
Focus Electrics, LLC (“Focus Electrics”) warrants this appliance from failures in the material and workmanship for three (3) years from the date of original purchase with proof of purchase, provided the appliance is operated and maintained in conformity with the provided Instruction Manual. Any failed part of the appliance will be repaired or replaced without charge at Focus Electrics’ discretion. This warranty applies to indoor household use only.
This warranty does not cover any damage, including discoloration, to any non- stick surface of the appliance. This warranty is null and void, as determined solely by Focus Electrics if the appliance is damaged through accident, misuse, abuse, negligence, scratching, or if the appliance is altered in any way.
