  • Slow Cooker Vessel is for slow cooking only, and not to be used when smoking.
  • This appliance is not to be used outdoors or on a stovetop.
    ASSEMBLE THE SMOKER

  2. Place Smoking Chamber with holes at the top onto Smoking Chamber Tray to surround Heating Element.

  3. Add wood chips around Heating Element, filling half full if smoking for 2 hours. If smoking longer, fill Smoking Chamber to the top. Do not overfill the Smoking Chamber. For lighter smoke flavor, reduce amount of wood chips. Add Smoking Chamber Lid.
    ASSEMBLE THE SMOKER

  4. Place Bottom Smoking Rack onto cutting board, Handles facing down. Add food to Rack. Lift Bottom Rack by the Handles and add Rack to Base. If using second Smoking Rack, add legs first, aligning leg indent with bar of Lower Rack. For best results when smoking food that fits on one rack, add food to second rack position.

  5. Add Smoking Chamber Lid onto Smoking Chamber, ensuring Lid is level.

HOW TO SMOKE

  1. Plug into outlet.

  2. Press ON/OFF Button to turn on and SLOW COOK Light will illuminate.

  15. Unit will automatically beep 3 times and switch to WARM when desired temperature is reached. KEEP WARM Light will illuminate and Display will show warm time.

NOTES:

  • If Temperature Probe is unplugged during heating, PROBE Light will flash and PrbE will flash in Display until Temperature Probe is plugged back into Probe Jack. Probe must be replaced within 5 minutes. If Probe is left unplugged for longer than 5 minutes, Slow Cooker will go into standby mode.
  • It is normal to have a small amount of smoke escape during cooking.
  • During COMBO Smoke, COLD Smoke time is 1/3 of total time for Program mode. For example, if COMBO Smoke is set for 6 hours the first 2 hours will be COLD Smoke and remaining 4 hours will be HOT Smoke. For Probe Mode, COLD Smoke time is always 1 hour, and then unit will switch to HOT Smoke until desired temperature is reached.
  • Smoking Chamber will darken after first use. Smoking Chamber must be cleaned after every use.
SMOKING TIPS
  • Slow Cooker Vessel is for slow cooking only, and not to be used when smoking.
  • Cover Smoking Chamber Lid with aluminum foil before smoking for easy cleanup.
  • To add flavoring and keep meats moist, marinate, brine or use a dry rub prior to smoking.
  • When smoking nuts or cheese, add aluminum foil to the Smoking Rack to prevent food from slipping onto the bottom or cheeses from dripping.
  • Do not soak wood chips before smoking. Soaking will lengthen the time for the wood chips to start smoking.
  • Meat should be placed fat side up on the Smoking Rack, with meaty side down.
  • Foods closest to the Smoking Chamber may be darker when compared to other areas of food on other Smoking Racks.
  • Do not open Lid while smoking. Opening Lid will allow smoke to escape or change the time.
  • No need to turn food over. Food should be smoked and/or cooked evenly.
  • For better ribs, remove the paper-thin membrane on the bone side of ribs. The membrane can get tough and harder to eat.
  • For best results, place food on the second rack if cooking small amounts, with no food on the bottom rack.
  • If cooking on all racks, arrange food around the Smoking Chamber for best results, and not directly over the Chamber.

SMOKING GUIDE

COLD Smoke is for smoking cooked nuts, cheeses, fresh vegetables, hard cooked eggs, fresh herbs and salt.
HOT Smoke is for smoking and cooking foods.

immerse cord, plug, or base in any liquid.

CAUTION Cut Hazard. Use care when cleaning debris from the smoking chamber tray.

TROUBLESHOOTING

There is no display visible on the control panel.

  • Is unit plugged in?
  • Is unit turned on?
  • Test that the electrical outlet is working using a lamp in known working order.
  • Was power interrupted (due to brownout, electrical storm, etc.) for 5 seconds or longer?

Cannot select temperature and/or hours.

  • Is unit plugged in?
  • Test that the electrical outlet is working, using a lamp in known working order.

Food is undercooked.

  • Was food cooked on WARM setting? Do not cook on WARM setting; always cook on LOW or HIGH heat settings.
  • Did you select LOW heat setting, but use a cooking time based on HIGH heat setting?
  • Did you have the Lid placed correctly on Slow Cooker?

Smoke leaks from Lid.

  • It is normal to have a small amount of smoke escape during cooking. Ensure Lid is seated properly on Base.

Smoke flavor too strong.

  • Try smoking with milder wood chips (see Smoking Guide) or reduce the amount of wood chips.

Food isn’t done after cooking the full amount of time recommended in my recipe.

  • This can be due to voltage variations (which are commonplace everywhere) or altitude.
  • The slight fluctuations in power do not have a noticeable effect on most appliances. However, it can alter the cooking times in the Slow Cooker. Lower than rated voltage will require longer cooking times and higher than rated voltage will require shorter cooking times. You will learn through experience if a shorter or longer time is needed.

Food is overcooked.

  • Was Vessel at least half full? Slow Cooker has been designed to thoroughly cook food in a filled Vessel. If Vessel is only half-filled, check for doneness 1 to 2 hours earlier than recipe time.
  • Did you select hours based on a LOW heat recipe?
  • Foods will continue to increase in temperature after desired temperature has been reached.

Display shows PrbE.

  • Ensure Probe is plugged into Probe Jack, and pointed end of Probe is in center of food and not touching bone or Vessel.
  • If Probe is plugged into Slow Cooker, unplug Probe from Slow Cooker and plug back into Probe Jack.
