BEFORE COMMISSIONING

Thank you for choosing a JAC system. It is essential that you read these instructions before installing and commissioning this machine. This will protect you and avoid damaging your machine.

These instructions refer to various illustrations in order to make them easier to understand.

These illustrations are at the end of the instructions. Please refer to them whenever you see the following symbols: (fig.X, n°Y).

To ensure your machine gives you full satisfaction over the coming years, we invite you to familiarise yourself with the following advice:

Enlist the help of your approved agent for installation, commissioning and service support.

WARRANTY

All JAC products are covered by a 5-year parts warranty.

This warranty is valid for all parts on your machine, including electronic components,
excluding consumables (please contact us for further information). Spare parts, which are available for a minimum of 10 years, are always delivered by express courier. This warranty takes effect on the date the equipment is installed.

Subject to the following restrictive conditions:

  • Installation carried out by an approved agent;
  • Equipment used in accordance with the instructions for use and for the intended purpose for which it was manufactured;
  • Equipment serviced on a daily basis in compliance with the instructions for use;
  • Regular servicing by the approved agent in compliance with service specifications with, at least one service a year (servicing chargeable to the user).
  • Exclusive use of genuine JAC parts.

This warranty does not cover:

  • Replenishment of consumables;
  • Parts not accepted as defective by our company;
  • Problems due to improper use of the equipment;
  • Problems due to installation not carried out by an approved agent;
  • Parts or problems due to transit damage or improper handling.

Repairing and/or replacing defective parts during the warranty period does not bring about an extension to the said warranty

WARNINGS

It is most important that these user instructions be kept with the machine for any future reference. Should this machine be sold or transferred to another user, please ensure that the user instructions are handed over such that this new user can be familiarised with its operation and warnings associated with it.

**** These warnings are given for your safety and that of others. We would therefore ask you to read them carefully before installing and using the machine.

This machine has been designed for use by authorised adults. Please ensure therefore that children do not touch it or use it as a toy

This machine is intended exclusively for professional use.

It is dangerous to modify or attempt to modify the specifications of this machine.

After having installed this machine, please ensure it is not standing on the power cable.

Follow the instructions given for its use.

This machine must be stored and used indoors in a room, protected from moisture and heat.

This machine must be adequately illuminated to operate it.

The noise level of this machine does not exceed 75 dB(A) in accordance with standard EN ISO 3744.

This machine must be used by one person at a time (unless instructed otherwise).

**** Always disconnect the mains supply before cleaning the machine inside/outside and when carrying out maintenance work.

This machine is heavy. Take all necessary safety precautions when handling it.

INSTALLATION AND COMMISSIONING

Unpacking the machine:

A. You will have access to the machine once the wooden case has been removed.
B. Remove the wooden battens wedging the castors.
C. You can take the machine off the pallet. Please be sure to do this with at least two people in order to lower it as gently as possible onto the floor and to ensure proper safety.

After unpacking your machine, check to ensure that it has not been damaged in transit. Please notify us of any discrepancy.

Location:

In order to achieve excellent performance and long-term reliability, choose a location which is:

Well ventilated, shielded from direct sunlight and away from sources of heat, with a sturdy surface free from vibration.

Electrical connection:

IMPORTANT: This machine must be earthed.
It is recommended that the system be protected with a fuse and an RCD.

Your mains electricity supply to the machine must be protected as indicated below: TL40 and TL 110:

  • North America: 15 A protection;
  • Rest of the world: 16 A protection.

TL 270:

  • 32 A protection.

For machines equipped with a variable speed drive, it is imperative that they be connected to a junction box on a circuit fitted with a type B 300 mA RCD.

Note: Any problem resulting from any other type of connection will not be covered under warranty.

Before connecting your machine to the mains supply and in order to prevent the motor from burning out when it is switched on, it is important to check that the mains supply matches the machine specification (see machine nameplate).

This machine complies with Machinery Directive 2006/42 and is CE marked as proof of this.

Please familiarise yourself with the safety pictograms displayed on the machine:

This pictogram indicates an electrocution hazard. Please isolate the machine before carrying out any work on it. You will find it on the electrical enclosure. (fig. 6, n°20)

You will find the circuit diagram for the machine inside the electrical enclosure cover. (fig. 6, n°21)
CONTROL AND SAFETY DEVICES

Commissioning:

Before commissioning, ensure that there are no extraneous objects interfering with the machine’s moving parts.

For machine operation, please refer to the “Operation” chapter.

Danger:

If the user or the machine is in danger, you must use the main isolator switch to cut the power supply to the machine (fig. 4, n°17).

Remove the plug from the mains socket before any maintenance and/or servicing work.

Any maintenance work or replacement of parts must be carried out by an approved agent

Details of safety devices:

This machine is equipped with two magnetic safety cut-out sensors located in the cover opening handle, which stop the motor when the cover is opened (fig. 1, n°9)

OPERATION

Braked castors must be locked while the machine is in operation (fig.1, n°8)

If your machine is equipped with the weighing option, you will need to unscrew the adjustable feet until the castors are realised by around 5 mm, while keeping the machine level (fig.3 n°16)

B. Set the unit of temperature measurement.
C. Set the unit of weight measurement (machine with weighing option).
D. Set the date format.
E. Set the date and the time.
F. Press the value to be adjusted.
G. Confirm the change of date and time.
H. Set the interval between the visual and audible alarms.
I. Set the interval between audible alarm reminders.
J. Return to home screen.

Setting you recipe

The Tradilevain has two recipe modes:

  • Automix® recipe: Agitation will not take place unless the increase in starter volume has exceeded the percentage you have specified. Interim agitation will take place if overflow is imminent.
    The Tradilevain operates in automatic mode.
    OR

  • Cyclical recipe: Throughout the cycle, agitation takes place at a predefined rate for each stage (fermentation, falling in storage, storage). Interim agitation will take place if overflow is imminent.

It should be noted that recipes 1 (cyclical) & 2 (Automix) are locked (factory). They can be used, looked up or copied, but cannot be edited.

**** For simplified commissioning and use, we advise you to use the standard Automix recipe and go on directly to stage “3 – Start Feed

A. Press the “recipes” key.
B. Press the Automix® recipe
C. Enter the recipe password (2633).
D. Press the “copy recipe” key.
E. Press the intended recipe.
F. Press the “use recipe” key.
It should be noted that the recipe framed in red is the recipe activated for the cycle.
G. Press the “edit recipe” key.
H. Set your feed time of day.
I. Set the time for the first agitation of the mix.
J. Set the pause time between mix agitations.
K. Set the time for the second agitation of the mix.
L. Press the “fermentation” tab.
M. Set the fermentation temperature.
N. Set the fermentation time.
O. Set agitation time during fermentation.
P. Set fermentation percentage before triggering an agitation.
Q. Press the “storage” tab.
R. Set storage temperature 1.
S. Set storage temperature 2. (storage 2 is triggered automatically 24 hours after feeding). Storage temperature 1 enables the sourdough starter to be stored for daily feeding whereas storage temperature 2 enables the starter to be stored up to 72 hours without feeding. It is inadvisable to set a storage temperature below 8 °C (46 °F) in order to preclude any risk of freezing on the tank wall.

A. Pour the initial starter into the tank.
B. Enter the desired low level (in litres).
C. Press the “Enter” key to confirm.

b. Using calculator (fig.14) (not available if weighing option fitted):

  • When you add product:
    A. Press the “+” key.
    B. Enter your quantity added.
    C. Press the “Enter” key to confirm.

  • When you extract product:
    D. Press the “-” key.
    E. Enter your quantity to be extracted.
    F. Press the “Enter” key to confirm.

A. Information on the weight remaining in the tank.
B. Press the “tare” key.
C. Information on the weight added or extracted since the last tare.

d. Feed (fig.16)

A. Pour the flour then hot water (45° Celsius – 113° Fahrenheit) into the tank.
B. Press the “cycle start” key.
C. Confirm cycle start.
D. Scrape down when the logo is displayed.
E. Close the cover, the cycle continues automatically.

Cleaning

B. Select the screen inactive time.
C. Clean the screen during the countdown.

A. Stop the cycle in progress.
B. Confirm cycle stop.
C. Empty your starter.
D. Pour very hot water into the tank (at least 60° Celsius – 140° Fahrenheit)
E. Press the clean logo.
F. Select the tank cleaning cycle duration.
G. Wait for the end of the cycle and drain/rinse the tank.

MAINTENANCE

Daily, by a trained operator.

A. Clean the tank seal with a damp cloth (fig.1, n°10).
B. Clean the radar level sensor with a damp cloth (fig.1, n°4).
C. Clean the outside of the machine with a damp cloth.
D. Clean the screen (Section 4a.) (fig.1, n°5)

Weekly, by a trained operator.

A. Clean the tank (Section 7.4.b)
B. Remove the tank seal (fig. 1, n°10) to clean it in hot water.

Do not leave the tank empty for several days at a time, always leave some water (above the nut that secures the propeller stirrer) so as to prevent premature wear of seals.

Monthly, by an approved agent.

A. Clean the evaporator by opening the vent grille (fig.1, n°12) and blowing it then opening a side door to brush (using a soft brush) the back of the evaporator (fig. 7)

CONSUMABLES

When ordering a spare part, check with your approved agent which part is required based on the spare parts catalogue issued by the manufacturer.
Always quote the machine serial number shown on the nameplate.
Your agent will place the orders with JAC.

MALFUNCTIONS

WARNING: The machine must be isolated from the power supply before attempting any work on it.

Error code Remedy
Shut off the power to the machine at the isolator switch, wait 1 minutes

and reset the isolator switch. If the fault is still there when the power is switched on again, contact your dealer.
| Shut off the power supply and clean your evaporator (8.3). If the fault is still there when the power is switched on again, contact your dealer.
| Lack of gas in the system: contact your dealer.Insufficient quantity of mother dough.
| Open / close your cover, check that the seal is fitted correctly and that there is nothing in the way of closing. If the fault is still there when closing, contact your dealer.
MALFUNCTIONS| Open the cover and clean your level sensor. If the fault is still there when closing, contact your dealer.
MALFUNCTIONS| Temperature measuring tube: contact your dealer.
