Usage Instructions

Sharpening Procedure:
The sharpening process is the same for each stage.

Usage:

  1. Place the knife sharpener on a flat surface and turn on the power switch to start it.
  2. Choose the appropriate slot for grinding based on the dullness of the knife.

Tips: Sharpening Angles for Knives.

  • Most knives have a bevel on both sides. When we tell someone that they should put a 20-degree angle on a knife, we mean that they should sharpen each side to 20 degrees. This creates a total angle of 40 degrees. It is the worldwide professional chefs’ and serious cooks’ experience that kitchen knives sharpened to 20 degrees cut very well and are still durable.
  • A 20-degree angle is common for general-purpose kitchen knives.

Tips: Blade Material

  • The type of blade material will affect how frequently you need to sharpen your knives.

USAGE METHOD

Sharpening Procedure(same for each stage):
Begin by placing the knife in the slot of each stage in use, so the side of the blade rests against the outside face of the blade guide and the cutting edge makes contact with the sharpening wheel.

Slowly pull the knife towards you through the slot, making sure to keep the cutting edge parallel with the table or countertop except when sharpening the tip of the blade. To sharpen the tip, slightly raise the knife handle as you draw the curved portion of the blade through the slots. Pass the knife through both the left and right slots three times, alternating between them. When drawing the knife through the slots, allow approximately one second for every two inches of blade. For instance, if you are sharpening a knife with an 8-inch blade, each pass should take approximately four seconds.

Note:
The greater the curve on the blade, the more you will need to lift the handle; conversely, with less curve, less lifting will be necessary. Some blades may not have a curve, in which case lifting the handle while drawing the tip through the slots is unnecessary.

Never operate the sharpener from the back side. Apply just enough downward pressure when sharpening to ensure consistent and uniform contact of the blade with the abrasive disks during each stroke. Excessive pressure is unnecessary and will not expedite the sharpening process. Be cautious not to cut into the plastic enclosure. Accidentally cutting into the enclosure will not affect the sharpener’s functionality or damage the blade’s edge.

Usage:

  1. Place the knife sharpener on a flat surface and turn on the power switch to start it.

    If the blade is very dull or if you are sharpening the knife for the first time, start with:

    • STAGE 1 – Coarse Grinding:
      This is the coarsest and most aggressive stage, designed to remove more material from the knife blade than the other stages. Pull the knife from the heel to the tip along the curve of the blade at a steady speed. (As shown in Fig. 1)
      (Note: Do not use stage 1 for sharpening serrated blades.)
      If your knife is somewhat dull, begin with:

    • STAGE 2 – Fine Grinding:
      This stage continues the grinding process by giving the blade a precision edge. It’s suitable for the daily maintenance of knives. (Fine grinding can eliminate burrs and grinding marks on the edge left by coarse grinding, making the edge smoother and sharper. It’s recommended to perform precision grinding on frequently used kitchen knives once a week.) (See Fig. 2)
      If your knife just needs a touch-up sharpening, start with:

    • STAGE 3 – Polishing:
      This stage is suitable for polishing the blade after fine grinding. (Polishing can remove tiny burrs and grinding marks on the edge, making it smoother and more lustrous.   3. Before using the knife to cut food, always wipe the knife blade with a damp cloth to remove any metal filings that may have accumulated during sharpening.

QUESTIONS AND ANSWERS

  • Q: How can I tell if my knife is sharp?
    A: Use it to slice food. If the knife does not slice the food with ease, it needs additional sharpening. Repeat Stages 2 and 3.
    CAUTION! Do not run your fingers along the edge of the knife to check sharpness.

  • Q: My knife is not sharp and I’ve gone through the whole knife sharpening procedure twice. What am I doing wrong?
    A: Although unusual, there are times when you will have to repeat Stages 1,2 and 3 more than once. This may occur during the first sharpening of a knife that has been improperly sharpened by another process previously.

    • It may also occur when sharpening knives of tempered steel which have extremely hard blades, such as some hunting knives.
    • To sharpen these types of knives with the BLACKBADGE knife sharpener, simply continue to repeat Stages 1,2 and 3 until the knife cuts food easily.
    • Depending on the condition of the knife blade, you may have to repeat the process several times. In extreme cases, this could be 10 times or more.
    • This extended process will only be necessary the first time you use the knife sharpener for this type of knife. Thereafter, you will be able to sharpen your knife following the normal sharpening procedure.
  • Q: Sometimes the sharpening wheels stall when I am drawing the knife through the blade guide slots. What causes this?
    A: The knife sharpener is designed so that very little effort is needed to draw the knife through the blade guide slots. If downward pressure is applied to the knife as it is being drawn through the slots, the sharpening wheels will stall.

  • Q: How do I get an even edge on my knife?
    A: To get an even edge, be sure to hold the cutting edge of the knife parallel to the table or the countertop while sharpening. When sharpening the tip of the blade, lift the knife handle slightly as the curved portion of the blade is drawn through the blade guide slots.

  • Q: Occasionally I see sparks when sharpening my knives. What causes this?
    A: Knives with high carbon content (usually higher quality knives) sometimes will spark when they come in contact with the sharpening wheels. This is normal.

  • Q: Can I sharpen serrated knives with my BLACKBADGE knife sharpener?
    A: No, Each time the serrated knife is sharpened, a portion of the serration will be removed. Over a long period, the serration on the knife may be completely removed.

  • Q: What’s the sharpening angle of the electric knife sharpener?
    A: 20 degrees, is common for general-purpose kitchen and outdoor knives.

Prohibiting

  1. Be careful to avoid electric shock. Do not use wet hands to operate. Do not immerse it in water or other liquids.

    Caution

  6. Make sure the knife is clean before sharpening and follow the instructions in the Manual.

  7. The knife should be pulled back evenly immediately after being placed in the sharpener. Do not push forward.

  8. Do not exert too much force while sharpening to ensure constant force and uniform speed.

  9. Do not attempt to sharpen scissors, axes, or any knife that cannot move freely in the grinding slot.

  10. It can’t be used to sharpen serrated knives.

  11. Do not use with oil, water or lubricants.

MAINTENANCE METHOD

  1. This knife sharpener is not suitable for use in direct sunlight or damp environments.
  2. Turn off the switch in time after use.
  3. The outside of the knife sharpener should be wiped clean with a damp cloth and do not immerse it in water or other liquids.
  4. The debris collecting tank at the bottom of the sharpener should be cleaned in time after each use.
  5. It is recommended to use the product at least once every three months to prevent aging.

WARRANTY

Warranty Description:

  1. The electric sharpener is covered by a warranty for 2 years from the date of purchase, only the main body is in the warranty range.
  2. Do not cover the mechanical surface or colour changes due to normal use, and the damages caused by unduly intensive usage or mishandling: overheating, dropping or intended breakage of product.
