GENERAL INFORMATION AND WARNINGS
The purpose of this manual is to enable a complete understanding of the operation, installation and maintenance of the appliance. The information and warnings necessary for the correct installation and use of the appliance are available, together with information about its features and possibilities, to enable you to take full advantage of its potential.

INFORMATION ABOUT DRY AGEING
Meat from animals should not be consumed when the animal has just been slaughtered because of the rigor mortis process that happens to all animal carcasses. Freshly slaughtered meat is tough and fibrous, so it is left to rest while the muscles relax and the piece becomes more tender and its flavour improves. Dry ageing allows this process to happen in a controlled way to obtain juicy meat with optimum flavour and texture.
Your new cabinet performs this meat ageing process by the dry ageing method, which essentially consists of the following:
The pieces of meat must undergo an ageing process for at least 14 to 28 days, but we recommend 21 days. It must never be more than 40 days because, after around day 30, more than 90% of possible muscle fiber breakdown has already happened. Following this period, the softening of the meat is due to decomposition of other proteins, and aroma and flavour are lost. This process should take place in a controlled environment at a temperature close to the meat’s freezing point, but without reaching it (1 to 3°C) to achieve the correct enzyme action. The cabinet should keep humidity stable to control microbial metabolism at around 55%-70% RH. Air flow around the pieces of meat should be constant to encourage ageing and avoid bacterial growth and foul odours enveloping the product. All this results in a process called “proteolysis,” which is the degradation of muscle proteins due to the activation of certain endogenous enzymes. This process enhances the meat’s most flavorful components and amino acids, resulting in meat that is more tender, due to the breakdown of muscle fibres, and juicier. The dry ageing of meat should always be controlled and supervised by an expert responsible for changing the factory settings based on experience. To achieve optimum results, it is essential to understand the process well and use high-quality meat.
Professional supervision of the whole process is essential: knowing the origin and quality of the meat to be matured, mastering the cutting and positioning of each piece, and labelling each piece correctly.
Once the meat has completed its ageing time, the dark and dry parts of the joint must be removed.
The table shows the minimum and optimum ageing times for each commercial category of beef.

GENERAL FEATURES
These appliances have been built to comply with EU food processing and preservation directives.
The cabinet you have purchased creates ideal conditions for the meat dry ageing process. It is available in cabinet format and in various sizes. It has a digital electronic controller that maintains the temperature and relative humidity within the required ranges, and a continuous air circulation system with an external air exchanger system to renew the inside air, equipped with an active carbon filter. It also has an optional automatic UV-C light to eliminate germs and bacteria for purer tasting meat.
The cabinets monitor the higher temperature and relative humidity given off by fresh meat when it is put inside and bring the levels down to the set limit. However, these appliances cannot increase the humidity because they are not equipped with a humidifier.
Only qualified meat control personnel should use this appliance. We recommend carefully monitoring the process during the first few runs to achieve a correct adjustment between the appliance’s working process, location, meat type and the ageing desired by the user.
Remember that dry ageing is recommended only for high-quality cuts of meat, as the process requires meat with a high degree of uniformly distributed fat. Also, bear in mind that the weight of the final product can be between 20% and 30% lower due to moisture loss and final trimming and cleaning before consumption.

PRODUCT DATA
All appliances have a data plate on one side that identifies the model and
shows its technical characteristics. Never remove the plate from the
appliance. Example data on the data plate affixed to the cabinet.
Note: This plate is only an example.

GUARANTEE
The appliance and its parts are guaranteed for one year from the date of sale. This warranty consists of replacement (shipping carriage forward) of the defective part or parts, provided that the fault is not due to misuse.
The guarantee does not include the labour involved in replacing the parts.
The guarantee does not cover, even during validity, any faults or broken parts caused by inadequate maintenance or subjecting the cabinet to operating parameters other than those set out in this manual and the particulars of each model listed in the catalogue (such as voltage other than that specified on the data plate, high ambient temperatures).
Returns MUST BE AUTHORISED IN ADVANCE by the manufacturer, and include the original packaging or similar.
INSTALLATION INSTRUCTIONS
Positioning, installation, repairs and modifications must only be carried out by an AUTHORISED TECHNICIAN, in accordance with the regulations in force in each country.
Improper installation, adjustment, servicing or maintenance of the appliance or tampering with it may result in material damage or injury.
Unpacking
Unpack the appliance and check that it has not been damaged in transit. If it is, notify your supplier and the carrier immediately. If you are unsure, do not use the appliance until the extent of the damage has been checked.
Packaging materials (such as plastics, expanded polyurethane, and staples) are potentially dangerous, so keep them out of the reach of children.
Do not lay the appliance on its side. If it has been laid on its side, consult
the manufacturer about how to proceed. If this happens, after standing it
upright, wait at least 2 hours before turning it on. Only maneuver the
appliance using a forklift or similar device to avoid damaging its structure.
Transport the appliance to the place where you intend to install it before
unpacking.
The packaging materials are fully recyclable; dispose of them in the
appropriate container.
Positioning and levelling
Keep the area around the appliance clear and clean to prevent the refrigeration unit fan from drawing in any materials that could become deposited on the condenser fins, reducing the system’s efficiency. Remove the pallet, taking care not to knock the cabinet. You can now level the appliance by screwing each of the feet up or down. When it is level, remove the protective film from the stainless steel using a blunt tool. Do not use a knife that could scratch the metal

In its final position, ensure that there is a clearance of 60 mm between the unit and the back wall, 30 mm from the sides, and 500 mm from the ceiling. If the appliance is on wheels, ensure it is on a flat surface. At start-up, make sure that there is no heat source nearby. For optimum operation of the refrigeration system components, ensure that the air intakes to the fan inside the cabinet and the condenser are not clogged or obstructed.
Do not install the unit outdoors.
Do not push anything through the protection grills of the fan or refrigeration
unit area.
Placing meat
For optimal ageing, we recommend hanging whole pieces of meat and placing cuts on the trays.
Electrical connection
The appliance must only be connected to the power supply by an AUTHORISED TECHNICIAN.
Follow your country’s legal regulations regarding mains electrical connections.
- Check that the mains voltage and frequency match those stated on the data plate.
- The mains supply to the cabinet must have an EARTH CONNECTION and the proper circuit breaker and differential protection.
- Check that the cross-section of the power supply cable is adequate for the expected load.
- The power socket must be Schuko type, as the plug on the appliance cable is of that type (also called type F or CEE 7/4), with 4.8 mm pins and earth. For safety reasons, do not use an extension lead. A different plug suitable for the destination country can be fitted on request, provided that the plug can withstand the appliance’s amperage and local electrical legislation allows it.
- If you detect any faults in the appliance installation, inform your supplier immediately.
- Do not install the equipment outdoors.
- In case of fire, do not use water. Use CO2 (carbon dioxide) extinguishers and cool the motor area as quickly as possible.
Failure to comply with the manufacturer’s specifications or improper installation exempts the manufacturer from liability and responsibility for personal injury or material damage to the appliance.
The appliance’s electrical characteristics are listed on the data plate.
Drainage connection
When installing the appliance in a permanent location, connect it to a mains drain with a trap between it and the drain to prevent cold from escaping. This operation must be carried out by qualified personnel.
Recycling
The product packaging consists of:
- Wooden pallet.
- Cardboard.
- Polypropylene strapping.
- Expanded polystyrene.
All packaging used for this appliance is recyclable, to which the correct disposal thereof will contribute to environmental conservation. For more information on recycling these products, please contact the relevant local government office. Dispose of these materials in accordance with current regulations.
European directive 2012/19/EU on waste electrical and electronic equipment mandates that household appliances should not be disposed of in the same way as municipal solid waste. Appliances no longer used should be collected separately to optimise the proportion of recovery and recycling of their component materials and prevent sanitary and environmental hazards. The crossed-out wheeled bin symbol is on all our products as a reminder that they must be collected separately. For further information on the correct disposal of household appliances, the owners may contact the responsible public service or the retailer.
THERMOSTAT INSTRUCTIONS
READ THE INSTRUCTIONS IN THIS MANUAL CAREFULLY BEFORE FIRST USE OF THE APPLIANCE.
THIS APPLIANCE IS FOR PROFESSIONAL USE ONLY. IT MUST ONLY BE OPERATED BY QUALIFIED PERSONNEL.
Turning on the appliance
With the inside of the cabinet clean, plug it into the mains. Check that the thermostat is not turned off . If it is, press the button for a few seconds to turn on the appliance.
- When the appliance is on, the display shows the cabinet’s temperature and humidity.
- After a few minutes, the compressor and other components will start, to bring the cabinet to the required temperature and humidity.
Operation and setting the thermostat
The cabinet you have purchased is equipped with an electronic temperature and humidity controller. With the factory settings, the cabinet will maintain environmental conditions inside suitable for dry ageing meat; there is no need to change the settings. Only qualified personnel should change the factory settings; any changes are made at the owner’s risk.
Altering temperature & humidity
- Steps to follow to change the temperature and relative humidity in DAV-200 and DAV400 models:
- Press one of the buttons on the display for a few seconds to unlock the screen.
- Press the button once. The preset temperature set point (SPt) is displayed.
- To change it, press once and use the arrows for a higher or lower temperature. Press again to confirm.
- Press the arrow buttons until you reach the desired humidity set point (SPh). Press once and use the arrows to change the relative humidity value. Press to confirm.
- To exit, press the button until the temperature and humidity settings are displayed.
- Steps to follow to change the temperature and relative humidity in DAV-400 and DAV750 models:
- Press one of the buttons on the display for a few seconds to unlock the screen.
- Press the button. The current temperature set point is displayed.
- To change the temperature, press the buttons. Press to confirm the new setting.
- When you have confirmed the new temperature setting, the relative humidity set point is displayed on the screen. To change it, press again and use the buttons to change the new relative humidity set point value. Finally, press the button to confirm.
Turning on the light
To turn the unit’s light on or off, first unlock the screen by pressing one of the display buttons for a few seconds. The open padlock symbol is displayed while the screen is unlocked. Once unlocked:
For models DAV-200 and DAV-400: Press the button once to switch the light on or off.
Accessing the menu to change language and view or change settings
To access the unit’s thermostat menu, unlock the screen by pressing one of the display buttons for a few seconds. The open padlock symbol is displayed while the screen is unlocked.
For models DAV-200 and DAV-400 programming access only:
Press the button for a few seconds until the “PA” parameter is displayed. Press again and enter the password to access the settings list.
For models DAV-400 and DAV-750:
To access the menu, press the button for a few seconds, after which two
options are displayed:
- Language: access this option to change the thermostat language. Press the button to access language selection. Use the up and down buttons to search for the language of your choice. When you have selected the new language, press to confirm. Then press the button to return to the menus and return to the unit’s temperature and humidity display.
- Service: access this option to access and change settings, display internal values and alarms, cancel data memory and reset settings. Use the buttons to select one of the options, then press the button to access it. To exit, press the button to go back through the menus and return to the unit’s temperature and humidity display.
Accessing auxiliary functions
To access the thermostat’s auxiliary functions, unlock the screen by pressing one of the display buttons for a few seconds. The open padlock symbol is displayed while the screen is unlocked.
For models DAV-200 and DAV-400:
Press the button for a few seconds to access the additional functions.
Use the buttons to select the function you need to view and then press . Press the button to exit.
For models DAV-400 and DAV-750:
To access the auxiliary functions, press the button once. These functions are:
- Manual defrost
- Overheating
- Humidity boost
- Energy saving
Press the buttons to select any of the functions, then the button to confirm. Press again to enable the function. To turn the function off again, follow the steps you used to turn it on. To exit, press the button to go back through the menus until the unit’s temperature and humidity are displayed.
Defrosting
For models DAV-200 and DAV-400:
This unit carries out defrost cycles automatically as needed, but you can perform one manually by pressing the button. The unit then defrosts manually (providing the settings for this function allow it).
For models DAV-400 and DAV-750:
This unit carries out defrost cycles automatically as needed, but you can perform one manually by following the steps explained above.
Maintenance
These guidelines will help you and your service partner ensure that the cabinet continues providing the best possible service throughout its useful life.
The following instructions discuss what cleaning you can do. They also describe how to troubleshoot any problems quickly before calling customer service. We hope you find them helpful.
Cleaning by the user
Before carrying out any cleaning operation, press the thermostat button and ensure that the unit is OFF. Then, unplug the appliance from the mains supply. The following instructions assume that the appliance is unplugged.
WARNING: Do not use steam cleaners! They can cause breakdowns and injury.
Never allow cleaning water to get into any electrical components or the ventilation grille.
Be careful not to damage or dislodge the data plate inside the appliance. It is important for our customer service.
Air renewal through the activated carbon filter
Change the carbon filter once a year to maintain full efficiency.
Changing the filter: Unscrew the plate at the bottom of the appliance and remove the cover. Remove the filter inside and replace it with a new one. Screw the filter cover back on.
Changing the UV-C light
Your appliance may be fitted with this option. To replace the lamp, first, unscrew and remove the metal air deflector plate behind it. Once you have removed the plate, you can access the UV-C lamp. Change the lamp and then screw the plates back where they were before.
Faults & Alarms
In the event of any faults or malfunctions, follow the steps below. The following table lists possible causes and possible solutions. If you are unsure or are unable to resolve the problem, contact technical support.

meat inside the cabinet| Check that the meat is correctly positioned and not
blocking the air outlets from the internal fan. Check that the meat has been
in the cabinet long enough to cool sufficiently.
Door closure| Check that the doors close properly.
Condenser cleanness| Check that the condenser is clean: Remember that the
cleaner the unit is, especially the condenser fins, the less energy it uses.
How often you need to clean it depends on the characteristics of the premises.
If it is dirty, call technical service to clean it.
Strange or excessive noise| Poor levelling or poor door closing| Check
that the cabinet is level and that the doors close tightly.
Friction with the unit’s moving parts| Check that no objects are rubbing
against any of the unit’s moving parts.
Loose fixings| Check that all screws (at least the visible ones) are
adequately tightened.

USEFUL TIPS
Read the following useful tips carefully to get the most out of your appliance.
Carry out the appropriate cleaning operations to ensure a long service life for your appliance.
- We recommend cleaning it before turning it on the first time. Repeat frequently to prevent infection. DO NOT use abrasive, corrosive, acidic, chlorine-based detergents, solvents or gasoline derivatives to disinfect or clean inside the unit.
- If salt blocks are included, unpack them by removing the film, and place them in the steel tray at the bottom of the unit. Check them every 2-3 days to avoid fluid build-up.
- The meat to be matured must be fresh, no more than five days after slaughter.
- To age meat cuts on the grills, make sure they have a good fat cover and around the bone as much as possible.
- Anyone touching the meat should wear protective gloves: no one should touch meat without gloves.
- Clean the appliance periodically and whenever there has been any spillage or there are residues. Before performing any cleaning operation, unplug the unit from the mains supply. These units are fitted with an emergency drain to facilitate cleaning. Either connect it to a waste water drain through a trap or drain it into a tank that is emptied periodically. During cleaning operations, you must remove the plug and clean the drain to avoid clogging it with solids. It is important not to leave any liquid residues that could stagnate.
- Do not clean the appliance with pressurized water jets.
- Condenser cleanness: When cleaning, take care not to bend the condenser’s aluminium fins. If they become bent, the air will not pass through them and condense, seriously damaging the unit. The guarantee will then not cover the necessary repairs.
- Some components around the condenser unit can get very hot, so there is a burn hazard: take the necessary precautions before accessing it. Check that the doors close properly.
- We recommend contacting technical service twice a year to carry out the necessary checks and maintenance.
- If you leave the appliance out of use for prolonged periods (such as holidays or temporary shutdowns), follow these guidelines:
- Unplug the unit from the mains supply.
- Empty the appliance and clean it thoroughly.
- Leave the door ajar to allow air to circulate and prevent mould growth.
