Blumtal Refractory Stone for Oven Pizza and Gas Barbecue
PRECAUTIONS
The pizza stone must only be used to bake pizzas, tar-te flambée, or bread in an oven or on a grill. Heat your pizza stone only in an oven or a barbecue grill and avoid any uses not specifically mentioned here.
CAUTION
The pizza stone gets very hot during use and can lead to burn injuries if
touched. As the stone retains heat, it may still be hot for a few hours after
use. Make sure to only touch the stone with heat-protective gloves and be
careful during use, especially when children are nearby. To cool, leave the
pizza stone in the oven or grill or place it on a fireproof base out of the
reach of children.
Always heat the pizza stone together with the appliance chosen. Drastic temperature differences may cause thermal shock and damage your pizza stone or, in the worst case, cause the stone to break. The pizza stone should never be placed directly on the bottom of the oven, as accumulated heat may damage enameled surfaces and possibly even heating elements. Always place the stone on an oven or grill rack; hot air must be able to circulate. If you use the stone on a gas grill or in a gas oven, make sure to read the manufacturer’s warnings and contact the manufacturer if you need assistance.
USING AN OVEN
Place the cold pizza stone on a rack in the middle of the oven and bake it with both top and bottom heat set to the highest temperature (depending on the oven this may be 250°C–300°C) for 25–45 minutes. The pizza stone will heat up and will then use the stored thermal energy to cook your baked goods. Place your pizza dough on the preheated stone.
Caution: Risk of burns from direct contact with the stone. Please use protective gloves or a separately available pizza peel. Leave the oven on during baking so that the pizza becomes crispy and brown on the top as well. The pizza must be baked for 5–7 minutes at 300°C or for 8–12 minutes at 250°C. The general rule for baking is, that the hotter the stone, the shorter the baking time. A short baking time is good for pizza toppings and keeps them tasting fresh. Avoid using baking parchment; the stone absorbs humidity which makes the bottom of the pizza extra crispy. Remove the pizza from the stone using heat-protective gloves or a separately available pizza peel. The pizza stone is then directly ready for the next baking process or switch off the oven and let the stone cool down completely inside the oven.
USING A GRILL
Place the pizza stone on the grill rack before the grill heats up to avoid thermal shock. Make sure that there is a space of 2–3 cm around the pizza stone so that the flame doesn’t go out or gas accumulates underneath. Heat your grill to as hot as possible. Most gas and charcoal grills can reach the desired temperature of 325°C–350°C. We recommend using a kettle grill so that the pizza can be baked evenly on all sides. The pizza stone should be adequately heated after 20 minutes. Place your pizza dough on the preheated stone.
Caution
Risk of burns from direct contact with the pizza stone. Please use
protective gloves or a separately available pizza peel. The pizza will be
ready in approximately 4 minutes at 350°C and 7–10 minutes at 300°C. After
baking, remove the pizza from the stone using heat-protective gloves or a
separately available pizza peel. The pizza stone is ready for the next baking
process.
MAINTENANCE & DISPOSAL
No repair possible, dispose of if damaged.
Dispose of household waste.
CLEANING THE PIZZA STONE
Clean your pizza stone regularly when it is dry and cool. Use a simple brush.
After brushing it off, heat the stone to remove food particles, odors, and
bacteria. Crumbs and flour can easily be cleaned off with a dry cloth or hand
brush and burnt-in cheese can be scraped off with a ceramic hob scraper. Any
surface stains can be sanded off with sandpaper. If you want to wash your
pizza stone, use only lukewarm tap water without detergent. After washing,
leave the stone to dry for at least a week to avoid cracking upon next use.
The pizza stone is not suitable to be washed in the dishwasher. If your oven has a pyrolytic self-cleaning function, you can leave the pizza stone in the oven with it. You can also freeze the pizza stone on the grill in a similar way to pyrolysis.
