First-time use
Clean the pasta machine with a cloth before first use
Mount the pasta machine onto a worktop (max. thickness 6 cm) with the aid of the table clamp and insert the crank into the eyelet at the side of the pasta machine.
Use
A Producing the pasta sheet (see B, C und D for possible further preparation) and making lasagne sheets.
Set the adjusting dial to setting 1 by simultaneously pulling and turning it.
Cut a piece off the dough and let it run through the rollers, using one hand
to feed the pasta sheet downwards into the roller and the other hand to turn
the crank.
PLEASE NOTE: if the dough becomes sticky, add enough flour to stop it
sticking to the pasta machine.
Repeat this process of folding the rolled pasta sheet again and again, feeding the closed side first and turning it through the rollers.
As soon as the dough has an even consistency, turn the adjusting dial to setting 2 and let the pasta sheet run through the rollers.
Then set the adjusting dial to setting 3, roll the pasta sheet through again and continue to do so until the dough has the desired thickness. PLEASE NOTE: to make lasagne, it is recommendable to use dough thickness settings 5, 6 and 7.
If you wish to make other types of pasta out of the rolled pasta sheets, please observe the comments under B, C and D.
B Making tagliolini or tagliatelle
Mount the tagliolini/tagliatelle cutting-roller attachment by pushing it onto the guideway on the pasta machine.
Choose the desired result (tagliolini or tagliatelle) and reposition the crank by inserting it into the corresponding eyelet at the side of the attachment.
Let the prepared pasta sheet run through the rollers by using one hand to feed the pasta sheet down into the roller and the other hand to turn the crank.
PLEASE NOTE: to make tagliolini or tagliatelle, it is recommendable to use dough thickness setting 7.
To complete the pasta making process, please follow the instructions under E.
C Making lasagne ricce or spaghetti (separate type 28410)
Mount the cutting-roller attachment for lasagne ricce/spaghetti by pushing it onto the guideway on the pasta machine.
Select the desired result (lasagne ricce or spaghetti) and reposition the crank by inserting it into the corresponding eyelet at the side of the attachment.
Let the prepared pasta sheet run through the rollers by using one hand to feed the pasta sheet down into the roller and the other hand to turn the crank.
PLEASE NOTE: to make lasagne ricce, it is recommendable to use the dough thickness settings 5 and 6. To make spaghetti, it is recommendable to use dough thickness setting 7.
To complete the pasta making process, please follow the instructions under E.
D Making ravioli (separate article 28420)
Mount the attachment for ravioli by pushing it onto the guideway on the pasta machine.
Reposition the crank by inserting it into the corresponding eyelet at the side of the attachment.
Use the dough edge cutter to cut the prepared, rolled pasta sheet with a length of approx. 50 cm.
PLEASE NOTE: to make ravioli, it is recommendable to use dough thickness settings 6 and 7.
Loosely fold over half of the cut pasta sheet.
Feed the pasta sheet with the closed side first into the lower area of the ravioli attachment (between the roller and the ravioli moulder).
First turn the crank lightly until the pasta sheet is gripped and then unfold the pasta sheet.
Spread teaspoonfuls of ravioli filling evenly between the pasta sheet halves, leaving approx. 5 mm (3/16 in.) out at the edges.
Then turn the crank slowly so that you can continue with filling.
As soon as the ravioli has been turned out of the rollers completely, lay them out on a tea towel to dry (point E). After that, they can be separated easily by hand.
E Drying and cooking
After making the pasta, leave it to dry on a pasta dryer or alternatively on a tea towel for at least one hour.
You can then cook the pasta in salted boiling water. The cooking time varies here depending on the thickness of the dough.
Cleaning
Please note that the pasta machine and the various attachments should not be cleaned under running water or put into a dishwasher.
Clean them with a brush, kitchen paper or a dry tea cloth.
If any dough gets stuck between the rollers, it can be easily removed once it is dry by turning the crank.
Recipe
Pasta dough
500 g (18 oz.) flour or 250 g (9 oz.) durum wheat semolina and 250 g (9
oz.) flour or soft wheat farina, 5 eggs, approx. 1-2 tablespoons of water, 1
teaspoon of salt; if you wish, you can add 1 teaspoon of olive/sunflower oil.
Alternative variants without egg: 400 g (14 oz.) flour/durum wheat semolina,
180 – 200 ml (6 1/3 - 7 fl oz) water, 2 tablespoons of olive oil, 1 teaspoon
of salt
Make pasta dough out of the above ingredients, put it into a freezer bag and
leave in a fridge or cool place for at least 1 hour, ideally overnight. Then,
cook the pasta as desired.
