How to use it – scissors

  • Place the sharpener on a flat, stable surface.
  • Hold the sharpener with one hand and the scissors in the other.
  • Insert the scissor blades into the slots on either side of the ceramic rod and push the scissors forward.
  • Close the scissors while pulling them out of the slot, towards yourself.

CLEANING AND STORAGE

  • Clean your sharpener with a damp cloth or gentle brush.
  • Wipe it dry straight away.
  • Do not rinse with water.

NOTE: This sharpener balances ease of use and the ability to achieve a high level of blade sharpness, which is required for everyday use and functionality. To get the best results, consult your knife blade manufacturer or knife specialist to ensure the correct angle is used to avoid damage to the blade. For superior, high-end knives a whetstone is recommended.

WHICH SHARPENING SLOT SHOULD YOU USE?

For sharpening metal knives

  • If your knife is dull or damaged, use the coarse slot.
  • If your knife is already sharp but requires honing or polishing, use the fine slot.
  • The sharpening angle for both slots can be adjusted to suit most blade types.
    • Use the coarse slot (carbide) for coarse sharpening or aggressive removal of metal. This provides a quick edge setting for very dull or damaged knives.
    • Use the fine slot (ceramic) for fine sharpening or polishing. This removes very little metal as well as small imperfections (known as burrs) and also polishes the blade edge. Use it to hone already sharp knives or as a second step after completing coarse sharpening.

For sharpening scissors

  • If your scissor blades are dull, use the scissor slot (not the two knife slots).
  • The sharpening angle of the scissor slot is fixed into position and cannot be adjusted.
    • Use the scissor slot (ceramic) for sharpening scissors or polishing the blades.

ADJUSTING THE KNIFE SHARPENING ANGLE
The knife sharpening angle on both slots can be adjusted to suit your knife.

To set the required sharpening angle

  • Press and push then turn the dial to set the angle.
  • Ensure the correct angle is used to protect your knife’s blade.
  • If unsure, contact the blade manufacturer for their expertise.

How to use it  knives

  • Place the sharpener on a flat, stablesurface.
  • Hold the sharpener with one hand and the knife in the other.

  • Hold the knife handle and apply a light downward pressure while pulling the knife through the sharpening slot from heel to tip.
  • Avoid rubbing the face of the blade against the walls of the slot when sharpening. Always pull the knife from heel to tip.
  • Repeat this action between 5-7 times.
  • Move the blade through the coarse slot first and then the fine slot never start with the fine slot and follow with the coarse slot as this can cause damage to the blade.
