Dear Customer
Read the following manual before using this product.
For the safety of the operator, equipment devices must constantly be kept in
working order.
The purpose of this booklet is to illustrate correct use and maintenance. The
operator has the duty and
responsibility to follow it.
WARRANTY
The Machine is guaranteed for 12 (twelve) consecutive months from the
date of purchase, provided it is used according to the instructions and
recommendations in this manual.
The liability of Sud Forni S.rJ. is limited to the replacement and/or repair of
partsthat’ 5 oy T = | & Ktion.
Transport costs for parts recognised under warranty, labour costs for the
removal of parts and their replacement are not included in the warranty.
Upon delivery, the customer must check that the machine has not been
damaged during transport and that it fully matches the ordered model.
Any complaints must be made in writing within ten days of receipt of the
machine.
The Customer shall only be able to assert their rights under the warranty if
the warranty conditions have been complied with. The warranty does not
apply in cases of normal wear and tear, neglect, poor maintenance, misuse,
negligence, accident or in the event of improper use.
THE WARRANTY IS VOID IN THE FOLLOWING
CASES:
– Improper use of the machine or its use by unqualified and/or professionally
trained personnel
– Use contrary to specific local regulations
– Incorrect installation
– Power supply defects
– Serious deficiencies in planned maintenance
– Modifications or interventions not authorized by the manufacturer
– Use of non-original or non-model-specific spare parts
– Total or partial non-compliance with instructions
– Exceptional events
– In the event that the buyer is not up to date with payments.
1 TECHNICAL MECHANICAL AND ELECTRICAL DATA
For the technical and mechanical data of the oven in use, consult the technical data sheet associated with this manual.
2 ROOM WHERE THE OVEN IS INSTALLED
The room must have the following characteristics:
FLUE : for steam exhaust with an efficient draught suitable for a pipe diameter of no less than 100 mm.
ELECTRICAL POWER SUPPLY: Three-phase power at least equal to the maximum
power of the oven.
Lower powers can be installed as the oven is equipped with electronic control
with power splitters. (Please contact the manufacturer for more information)
In any case, take into account other electrical consumers when determining
the power to be installed in the room where the oven is to be installed.
3 OVEN INSTALLATION
The following steps must be taken to install an oven: UNLOADING the oven
by forklift truck or crane. (See illustrations on pages 5-6)
CHECKING the condition of the oven and all its parts.
WARNING – In the event of faults or breakages notify the manufacturer, otherwise the warranty will lapse.
The oven must be positioned at least 10 cm away from the walls. A lack of ventilation can impair the functioning of electrical and electronic parts, with the risk of overheating and fire. If there are no walls but other objects in the vicinity of the oven, make sure they are not made of combustible material.
In this case, they must be covered with non-combustible thermal material, paying close attention to fire prevention regulations. The room where the oven is placed must not be accessible to children and/or persons not qualified to operate it.
4 ELECTRICAL CONNECTION
The electrical connection of the oven must be carried out by qualified personnel who meet the necessary technical requirements set by the country where the oven is installed. The oven’s power cable must be connected to external omnipolar switch with a minimum contact opening of 3 mm located in the immediate vicinity.
Overcurrent protection devices must comply with the requirements of the relative CEI standards (or corresponding I.E.C. publications). The devices used for connection must bear the CE mark if installed in the countries of the European Community, or recognised marks in the country of installation be no less than IP 44 with the characteristics laid down in Norma CEI EN 60529 “GRADI DI PROTEZIONE DEGLI I.E.C.).I 60529 ‘PROTECTION RATINGS OF ENCLOSURES’. Ensure that the oven has its CEI 64-8 “IMPIANTI DI MESSA INVOLUCRI”. earth terminal connected to an earthing system in accordance with CEI 64-8 ‘EARTHING SYSTEMS’ (or corresponding IEC publication).
5 PRE-TESTING OF THE OVEN
During the oven’s first idle cycle, the temperature must rise gradually. Starting from low values, turn off the oven from time to time, or graduate the calories so that changes of 40/50 degrees do not occur in less than one hour. This is to avoid unpleasant odours from the first heating of the insulation materials and to allow the oven to dry out gradually.
WARNING – Take care that the earthing system is the first thing to be connected in order to avoid risks from leakage currents.
6 ROUTINE MAINTENANCE
WARNING – CLEANING THE OVEN. Before any cleaning of the oven, make sure that there is no voltage in it by opening the external omnipolar switch.

2 LAMP MAINTENANCE
1.1 The lamp is located on the operator’s right-hand side
WARNING When replacing the interior light bulb, ensure that there is no voltage (either 400Vac or 230Vac) for this purpose open the external omnipolar switch.
Remove the external grid on the chamber side and replace the lamp, ensuring that the lamp does not hit the partition glass

WARNING To access the glass element, the screws that support it must be removed.
Unscrew the screws securing the glass to the chamber. A screwdriver with a cross tip must be used for this operation

Only authorised personnel may enter the work rooms and use the oven;
Only qualified personnel should carry out repair and maintenance work on the oven.
Do not place liquid products to be heated in the cooking chamber; do not place flammable materials on top of the oven and do not install the oven near flammable sources;
Do not insert objects or live animals into the chamber while the oven is in operation;
Do not move the oven even if it is equipped with wheels during operation;

DISPOSAL
The device must be disposed of according to local regulations regarding the collection of electrical and electronic equipment.
PRELIMINARY REMARKS
This controller performs the following functions:
1 – Thermostatic control with reference to a thermocouple in the cooking chamber.
2 – Control of the heat delivered by the heating elements located on the top and bottom of the machine, in a differentiated and alternating
manner by power splitters; this function, which is the most important, allows precise cooking and electrical energy savings.
3 – Control of cooking times.
4 – Pre-start-up of the oven.

1 FUNCTIONS ON THE ‘ON’ SCREEN
The On/Off button only switches the controller on if the oven is On; the controller is switched off when the Off button is pressed lightly.
The On/Off Light button only switches the light on if the oven is On; the light switches off when the oven is switched off.
The (-/+) button for raising and lowering the programmed temperature allows the oven to reach the desired temperature. N.B. The programmed temperature can be up to 490°C.
The Temperature icon shows the current oven temperature (the upper digit) and the set temperature (the lower digit)
The Power icon indicates the power set on the top (upper icons) and the power set on the bottom (lower icons). When the LEDs are on, the heating element is on; when the LEDs are off, this means that the heating element is off.
The Timer icon indicates the temperature and cooking time we want to set for the pizza (in the example 1 minute), at the end of the time the device will emit a warning sound.
The Start icon indicates that the oven is ready for use. When the LED is on, the oven can be used, but when the LED is off, the oven cannot be programmed for any cooking step.
By tapping on the cooking time buzzer, the cooking time function LED will light up and the 2-digit numerical display will indicate the cooking times that can be set by tapping on the relative buttons (+/-).
The pre-start-up key indicates the hours until the controller and thus the oven start-up, these values can be changed by using the corresponding (+/-) keys.
RESET FUNCTION
To access the procedure, proceed as follows:
Lightly press the light + on button. This procedure activates the reset function of the controller, allowing it to restart from a standard programming condition.
N.B. If the controller is idle for more than a week all programmed data will be lost, and the controller will restart from a standard programming condition

ELECTRIC HEATING ELEMENT CONTROL
It is possible to carry out a pulse-type control over time of the heating elements. The Make sure the device is switched on and that no cycles are running.
In the power icon section, it is possible to adjust the power of the top and bottom heating elements.
If you intend to set the power of the bottom or top heating elements, press the button shown in the figure and press it as many times as you wish to increase or decrease the heat and energy consumption relative to the work load to be carried out.
This control is programmable on a scale from 0 to 10 in a differentiated and alternating manner on the top and bottom. When the LEDs are on, electricity passes through the heating elements when they are off, it does not. N.B. This screen can calibrate the time that the heating element pack in the bottom oven mouth is controlled with, from 0 to 7. The higher the value, the more heat will be given off by the heating element.
