BUTTERCREAM FROSTING

  • PREPARATION TIME: 10 minutes
  • SERVINGS: 8 CUPS

INGREDIENTS:

  • 1 lb powdered sugar
  • 1 cup pasteurized egg whites
  • 1 tbsp pure vanilla extract
  • pinch salt
  • 3 cups unsalted butter room temperature
  • lemon juice

INSTRUCTIONS

  1. Wipe down your equipment with lemon juice to eliminate any grease. In the bowl of your stand mixer fitted with the whisk attachment, combine the
  2. Set the mixer to low speed and mix until the eggs and powdered sugar have turned into a smooth paste. Increase mixer speed to high and whip until medium peaks form.
  3. Switch out the whisk attachment for the beater attachment; this will prevent excess air from being incorporated into the buttercream. Set the mixer to medium-low speed and add the vanilla and salt.
  4. One stick at a time, add the butter and continue to whip until smooth and creamy. It will appear to be curdled at first, but allow it to continue to mix until it has fully come together. Set your mixer to run at the lowest speed for about 5 minutes to eliminate any excess air bubbles. Remove any remaining air bubbles by pressing the buttercream against the side of the bowl with a rubber spatula.

GARFIELD’S PEPPERONI PIZZA

INGREDIENTS

  • 12 oz ball of premade pizza dough (homemade or store bought)
  • Flour, for dusting the surface
  • 1/4 cup passata
  • Parmigiano Reggiano, grated, to taste
  • 4 oz mozzarella cheese, shredded
  • 3 oz pepperoni, cup & char style preferred
  • Dried oregano

INSTRUCTIONS

Rest the Dough

  • Place the dough ball in a sealed container or in a bowl covered with a dish towel. Set in a warm location and let it rest for 1 to 2 hours. It should double in size and appear lighter and airy.

Preheat your Oven

  • Outdoor Pizza Oven: Preheat your outdoor oven on high. The temperature of the stone should reach at least 800°F. (Or follow the manufacturer’s instructions.)
  • Home Oven: Place a pizza stone in the middle of the cold oven. Then preheat the oven to 500 °F convection. Let the pizza stone heat for 30-60 minutes. (Note: It is important to place the pizza stone in a cold oven. Putting a pizza stone in a hot oven may lead to thermal shock, which can cause your pizza stone to crack or shatter.)

Assemble the Pizza

  • Place the dough onto a lightly floured pizza peel or on the back of a baking sheet.
  • Spoon and spread the passata on the base, leaving a 1.5-inch border around the edges.
  • Sprinkle the dried oregano, then the grated Parmigiano Reggiano and the shredded mozzarella over the passata.
  • Arrange the pepperoni evenly over the cheese.

Bake the Pizza

  • Outdoor Pizza Oven: Using a pizza peel, launch the pizza into the oven. If the oven has a flame control, turn the flame to medium-low or low. The pizza will take from 90 seconds to 3 minutes to cook, turn every 20 to 30 seconds to ensure an even bake. (Time will vary based on the oven & outdoor temperature.)
  • Home Oven: Using a pizza peel (or an inverted sheet pan) launch the pizza onto the hot steel/stone. Cook the pizza for 8 minutes or until the cheese has melted, the crust is golden brown, and the pepperoni is sizzling. Slice and enjoy!
